2 cups AP flour

1 tsp baking powder

1 tsp salt

½ tsp cinnamon

3 bananas, very ripe

¾ cup brown sugar

2 eggs

½ cup vegetable oil

⅓ cup sour cream

1 tsp vanilla extract

¾ cups crushed Cadbury Mini Eggs

Glaze and garnish

1 cup powdered sugar

2 tbsp water

3 tbsp finely crushed Cadbury Mini Eggs


1. Preheat your oven to 350°F. In a mixing bowl, combine the flour, baking powder, salt, and cinnamon and whisk well to combine evenly. In a separate bowl, mash the bananas well then add the sugar. Whisk to evenly incorporate, then add the eggs one at a time. Add the vegetable oil, whisking well to combine, then repeat with the sour cream and vanilla extract. Then, add the dry ingredients to the bowl and whisk just to combine.

2. Crush your Cadbury Mini Eggs by placing them in a large plastic bag, then hit them with a rolling pin or kitchen mallet. Add the crushed Cadbury Mini Eggs to the mixing bowl, then fold to incorporate. Spoon the batter evenly into your pre-sprayed mini loaf pan to create 8 small loaves. Bake for 35 minutes, or until the top is golden brown (and slightly cracking) and a cake tester comes out clean. Remove and allow to cool.

3. Make the glaze by whisking the powdered sugar together with the water. When the mini banana breads have cooled, remove them from the pan and drizzle them with the glaze. Top with additional finely crushed Cadbury Mini Eggs for garnish.
