Baileys Strawberry Shortcakes

Give your summer strawberry shortcake a boozy boost with Baileys!

Ingredients

Strawberries

5 cups quartered strawberries (if strawberries are large, cut into more pieces)

1⁄4 cup sugar

Biscuits

2 cups flour

3 tablespoons sugar

1 tablespoon plus

1 teaspoon baking powder

1 teaspoon kosher salt

1⁄2 cup unsalted butter, cold and cut into small cubes

1⁄2 cup buttermilk

1⁄4 cup Baileys Original Irish Cream (or Baileys Strawberries and Cream)

2 tablespoons heavy cream

Baileys Whipped Cream

1 cup heavy whipping cream

3 tablespoons Baileys Original Irish Cream (or Baileys Strawberries and Cream)

2 tablespoons powdered sugar

Preparation

1. Strawberries: Stir together quartered strawberries and sugar in a bowl. Refrigerate while making the other components.

2. Biscuits: Preheat oven to 425oF.

3. In a food processor, combine flour, sugar, baking powder, and kosher salt. Pulse a few times to combine. Add cubes of cold butter and pulse until butter is broken down into small bits, pea-size or smaller. Transfer mixture to a bowl. Fold in buttermilk and Baileys Original Irish Cream, just until combined (do not overmix). Mixture will be shaggy.

4. Use your hands to gently shape dough into a ball. Transfer dough to a floured surface. Using your hands again, flatten dough until it is 1⁄2-inch thick. Cut dough into 3-inch circles using a biscuit cutter, cookie cutter, or a glass. Combine scraps to cut out additional biscuits.

5. On a parchment lined sheet tray, place biscuits so that they are touching each other (having them touch each other helps them to support each other and rise higher while baking).

6. Brush biscuit tops with heavy cream. Bake for 15–16 minutes or until golden brown. Let biscuits cool while making the whipped cream.

7. Baileys Whipped Cream: Pour heavy whipping cream into a bowl. Beat with a hand mixer on high speed until medium peaks form. Add Baileys Original Irish Cream and powdered sugar. Beat again until medium peaks form again.

8. Assembly: Split a cooled biscuit in half horizontally. Spoon a few strawberries onto the bottom biscuit half. Add a dollop of Baileys whipped cream. Place on the top biscuit half, add a few more strawberries and another dollop of whipped cream to complete the shortcake stack. Repeat with the rest of the biscuits, strawberries, and whipped cream.
