
Red Chicken Curry Stir-Fry
Serves 4

Cook Time: 15 mins

Ingredients
2 chicken thighs (500g), cut into 2cm slices
1 white onion, sliced
1 tbsp vegetable oil
195g AYAM™ Thai Red Curry Paste
125g snow peas, trimmed
300g corn spears
1/4 cup coriander
1 red chilli, sliced
Steamed rice, to serve
Method
1. Place a large pan over medium heat. Once hot, add the vegetable oil, chicken and onion. Cook for two minutes until the chicken is seared.
2. Next, add the AYAM™ Thai Red Curry Paste, AYAM™ Coconut Milk, snow peas and corn spears. Turn the heat down to a simmer and cook for ten minutes, stirring intermittently.
3. Turn off the heat and serve with freshly steamed rice. Garnish with coriander leaves and sliced chilli.

Sticky Oyster Beef Stir-Fry
Serves 4
Prep time: 10 mins
Cook Time: 15 mins

Ingredients
500g beef oyster blade, sliced
2 tbsp vegetable oil
1 inch piece ginger, julienned
1 broccoli, sliced into florets
2 carrots, thinly sliced
1/4 cup spring onions, finely sliced, to garnish
200g AYAM™ Rice Noodles, pre cooked
Method
1. Place a large pan over medium-high heat. Once hot, add the vegetable oil and beef. Cook for two minutes until the beef is seared.
2. Next, add the ginger, broccoli, carrots, AYAM™ Oyster sauce and AYAM™ Sweet Soy Sauce. Turn down the heat to medium and stir fry for five minutes until the vegetables are tender.
3. Turn off the heat and stir through the AYAM™ Rice Noodles. Garnish with spring onions upon serving.

Coconut-Satay Pumpkin Stir-Fry
Serves 4
Prep time: 10 mins
Cook Time: 15 mins

Ingredients
1/2 butternut pumpkin, diced into 1.5cm cubes
1 garlic clove, minced
2 tbsp vegetable oil
1/4 cup water
125g green beans, trimmed
1 red capsicum, sliced
1/4 cup chopped peanuts, to Garnish
Served on Rice
Method
1. Place a large pan over medium-high heat. Once hot, add the vegetable oil, pumpkin and garlic. Cook for 3-5 minutes until the pumpkin is lightly browned.
2. Add the AYAM™ Satay Sauce, AYAM™ Coconut Milk, AYAM™ Light Soy Sauce, water, green beans and capsicum to the pan and toss to combine.
3. Turn the heat down to a simmer and cook for ten minutes or until the pumpkin is tender.
4. Turn off the heat and serve the Stir Fry with freshly cooked rice. Garnish with chopped peanuts.
