Balsamic Pork Skewers

Try not to eat these Balsamic Pork Skewers as quickly as you can cook 'em — made with Australian Pork.

Makes 12

Ingredients

450g-500g pork fillet

1 tsp garlic powder

Salt, to taste

Pepper, to taste

1 medium apple

1 medium red onion

½ cup balsamic glaze

Olive oil

12 small skewers

To Garnish

1 baby cucumber, diced finely

1 tbsp peanuts, chopped finely

1 long red chilli, diced finely

Method

STEP 1: On a flat surface, lay the pork fillet and, using a sharp knife, slice cuts of meat approximately 2cm thick.

STEP 2: Add the pork to a bowl then season with garlic powder, salt and pepper.

STEP 3: Place the apple on a chopping board and cut into medium size cubes, approximately the same width as the pork.

STEP 4: Place the red onion on a chopping board, remove the top layer of skin, then using a sharp knife, cut into medium size cubes, approximately the same width as the pork — ensuring the onion layers don’t separate.

STEP 5: On a skewer, thread a cube of red onion (3-4 layers), followed by a piece of pork, another cube of red onion, then a cube of apple to top it off.

STEP 6: Heat an oiled griddle pan over medium heat, then add the skewers side by side. Cook the skewers for 5 minutes, rotating every minute to ensure an even cook.

STEP 7: Once the skewers have cooked for 5 minutes, drizzle ¼ cup of balsamic glaze over the skewers and allow them to cook for 1 more minute, rotating once more to evenly coat.

STEP 8: To serve, add the skewers on a plate and stack in a pile. Drizzle with the leftover balsamic glaze and garnish with cucumber, peanuts and chilli.
