Aunt Bessie's Roast Dinner Hash
Keep the kitchen mess down to a minimum this autumn with this delicious, hearty Aunt Bessie's roast dinner hash!

Cook time: 60 minutes in total
Ingredients:
For the tray bake
2 carrots cut in half then half-moons
1 red onion cut into wedges
1 stalk of fresh rosemary
2 stalks of fresh thyme
Olive oil
700g piece of beef topside
1 pack of Aunt Bessie’s Stuffing Balls
700g to 800g of Aunt Bessie’s roast potatoes
50g kale, chopped
For the Horseradish Mayo
3 teaspoons horseradish
2 dessert spoons mayo
A pinch of salt and pepper
A handful of chopped parsley
Preparations
1. Heat the oven to 180℃. Take a large ovenproof dish and add the carrots, red onion wedges, rosemary, and thyme. Drizzle with a little oil and some salt and pepper. Using a spoon, mix the oil over the vegetables. Pop in the oven for 15 minutes.
2. Take the beef joint on a separate tray and drizzle with oil and some salt and pepper. Pop this in the oven as well. This will take 35 minutes to cook if you like rare beef. It can be cooked more at the end if you wish.
3. Defrost the Aunt Bessie’s frozen stuffing. Then, break apart into pieces ready to sprinkle over the tray bake.
4. Take out the vegetables from the oven after 15 minutes and add the Aunt Bessie’s roast potatoes. Give them a mixing. Pop back in the oven for 25 minutes.
5. Take out the oven dish and mix the kale through gently. Sprinkle over pieces of stuffing and pop in for the last 20 minutes.
6. Slice pieces of juicy beef ready to lay on the top. If you like your beef a little more done, pop the whole dish back in for a further 5 minutes. While you're waiting, mix together the mayo ingredients ready for topping.
7. Remove the dish, top with beef and horseradish mayo, and add a final sprinkle of salt and parsley if you wish.
8. Serve immediately!
