Sandwich Roll-Ups
INGREDIENTS

Roll-Up
¼ red bell pepper, cut into thin strips
1 carrot, peeled and cut into sticks
¼ cucumber, peeled, seeds removed, cut into thin strips
½ avocado
4 slices L’oven Fresh 100% whole wheat sandwich bread

¼ cup SimplyNature Organic baby spinach leaves
Easy Sandwich Spread
4 ounces Happy Farms cream cheese, room temperature
2 tablespoons thinly sliced scallions
1 garlic clove, finely chopped
Stonemill Salt & pepper, to taste
PREPARATION
1. In a small mixing bowl, combine the cream cheese, garlic, scallions, salt, and pepper. Stir to fully combine. Set aside.
2. Remove the crusts from the sliced bread. Using a rolling pin, flatten and roll out the bread slices evenly.
3. Spread each slice of bread with 2 teaspoons of cream cheese.
4. Layer turkey slices on the bread, followed by a few leaves of baby spinach.
5. Add a few sticks of carrot, bell pepper, cucumber or avocado. Roll up the bread. (Mix and match your favorite spreads and vegetables!)
6. Cut each roll into three or four pieces. Pack as part of a healthy lunch with fruit and vegetables.
