Simple Huevos Rancheros Brunch Cups

Try this great brunch recipe, it's quite the twist on Huevos Rancheros making them simple and compact. This is my Huevos Rancheros Brunch Cups They are a big hit on the boat when I make them and they are super simple. Ingredients

Note: All ingredients here are for one serving

* 2 eggs

* 2 tortillas

* 2 tbsp black beans

* 1 tbsp salsa

* 1 tbsp guacamole

* salt & pepper to taste

Step 1: Spray the Tin

Make sure you spray the muffin tin well with cooking spray so your cups don't stick.

Step 2: Stuff

Stuff the tortillas in the pan to make cups.

Step 3: Trim

Trim off the excess tortilla.

Step 4: Give it a Little Bake

Bake the cups for about 10 minutes in an oven at 350 degrees just to get them started a little. that way the salsa and beans don't sag the cup.

Step 5: Beans & Salsa

Once out of the oven you can add the 2 tablespoons to the bottom of the cup and the salsa on top of that.

Step 6: Crack the Eggs

Next Crack your eggs into your cups on top of the salsa.

Step 7: Back to the Oven

Pop them back into the 350 degree oven for another 10 minutes or until the eggs are cooked to your liking.

Step 8 : Top it Off

Now that you have pulled out your cups and the eggs are done to your liking, top it off with some salsa and guacamole,
