Ingredients
1/2 lbs. Flank Steak
1 small Onion
Half of a Yellow Bell Pepper
Half of a Red Bell Pepper
1 loaf French Bread
1/4 cup Butter
2 Tbsp. Flour
1 cup Milk
1 cup Pepper Jack cheese
Cayenne Pepper
Olive Oil
Preheat over to 400 degrees.
Over medium high heat, cook flank steak to medium rare. Remove from heat and let rest.
While steak is resting, cook onion and peppers until tender, about 10 minutes.
Cut steak into bite sized pieces and toss in with the pepper mixture. Cook for 10 minutes.
In a saucepan, create a rue by melting butter then adding flour. Cook for 1 minute. Add milk in stages, whisking thoroughly after each addition. Remove from heat and add cheese and cayenne pepper. Stir until the cheese is completely melted.
Slice the french bread into half inch thick slices. Drizzle the bottom of each slice with olive oil. Spread cheese sauce on bread, then top with steak and peppers. Sprinkle more cheese on top. Bake for 10 - 14 minutes.
