WTF is this nonsense?!  I’m sick of all these diet/vegan/paleo/gluten-free when you don’t have celiac/weird food fad postings. You know what is a good diet that will keep you a good weight? Eating food you can pronounce, knowing all the ingredients, and using good quality stuff. Not eating massive quantities too, woah- seriously. Easiest recipe for chili ever? a few lbs. of extra lean ground beef (93%)- drain the gross crap if you want, a few cans of roasted crushed tomatoes, put in some pintos, chili beans, pinquitos, kidney beans, and some delicious spices like ancho chile powder and/or chile de arbol, salt, oregano, and just let it simmer for a bit. Amazingly enough there is little fat, and wow guess what, it’s good. If you want the extra layer of flavor, cut up an onion and sauté it after the meat- it adds a good layer of flavor, add in some garlic with that too. woah. Holy crap. and guess what- beef has more iron in it than turkey and less sodium and may have less fat depending on the kind you buy- so yeah, check your stuff. I love my beef and I love chili and it won’t take too long.

Honestly you can make any chili recipe with textured vegetable protein instead of meat, if you add fat you really can’t tell the difference. Most commercial canned chilis use TVP for almost ALL of their meaty texture, only adding a token amount of beef for the benefit of the label. TVP can also be used in tomato sauce, cottage pie, mac and cheese (for chili mac or just a vegan or vegetarian hamburger helper)… anything really. It sounds like some kind of processed nightmare food but it’s incredibly healthy and cooks faster and easier than hamburger (plus since it absorbs cooking liquid it automatically thickens your food, making your sauces instantly richer and tastier without adding starch) One more miracle use for TVP… this is my secret for amazing, extremely low calorie, graham cracker pie crust: pulse a half cup of TVP in a blender until it’s finer but not quite a powder. Add in 4 tablespoons of coconut oil or coconut butter, 3 packets of artificial sweetener (maybe more depending on your personal taste), and a teaspoon of cinnamon, mix it up and press it against the sides and bottom of a pie pan. then fill it with whatever your favorite cheesecake or cream pie recipe may be, it’s delicious, low in calories and low in carbs, plus it adds a lot of protein. I would personally recommend this pie recipe: http://chocolatecoveredkatie.com/2011/09/06/the-ultimate-chocolate-fudge-pie/
