11. Cacio e Pepe With a Parmesan Frico

Cacio e pepe literally means cheese and pepper, and a frico is basically just a cracker made of pure cheese (yes, hallelujah). Just make sure to get rennet-free* parmesan. Get the recipe here.

*Most veg heads already know this, but many cheeses contain a little-known ingredient called rennet, which is not vegetarian! If you are cooking for vegetarians, make sure to check the cheese's ingredient list.


22. One-Pot French Onion Pasta

Just replace the chicken broth with vegetable broth and you're good to go!
