- 6 oz ricotta cheese (170 g)
- 2 tablespoons pesto
- ⅓ cup parmesan cheese (35 g)
- ⅓ cup bread crumbs (35 g)
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 egg

Preparation
- Preheat oven to 400ºF/200ºC.
- In a medium bowl mix together ricotta, pesto, salt, pepper, parmesan, breadcrumbs, and the egg.
- Butterfly fillet the 2 center cuts of salmon.
