The Best Kind Of Bacon Is Coated With Sugar And Beer

The only thing better than bacon is sweet-salty glazed bacon that tastes like beer. Get the full football party menu here.

Here's what you'll need to make the glazed bacon:

1. Bring the beer to a simmer in a small sauce pot over medium heat, and simmer it until it's reduced by about one-third.

It'll foam up a lot at first, but that should settle in a couple minutes.

2. Add the brown sugar, maple syrup, mustard powder, and cayenne pepper.

3. Whisk together and let the mixture simmer...

...until it's dark golden brown and reduced to a thick syrup, about 10 minutes.

4. Fit two baking sheets with wire racks and coat the racks with nonstick cooking spray. Lay the strips of bacon on the racks. Brush the top sides of the bacon with the glaze.

5. Flip the bacon.

6. Brush with glaze again, so that both sides are coated.

7. Bake in a 400°F oven until the bacon is crispy and golden brown, 20 to 25 minutes.

8. Let the bacon cool to room temperature, then serve.

IPA-Glazed Bacon

Serves 8-10

Recipe by Christine Byrne

INGREDIENTS

Nonstick cooking spray

6 ounces IPA-style beer

¼ cup packed dark brown sugar

2 tablespoons maple syrup

1 teaspoon mustard powder

¼ teaspoon cayenne pepper

1 pound bacon

PREPARATION

Preheat the oven to 400°F and fit two large, rimmed baking sheets with wire baking racks, then spray the racks with nonstick cooking spray.

Bring the beer to a simmer in a small saucepan over medium heat, and simmer until it is reduced by about one-third. Add the brown sugar, maple syrup, mustard powder, and cayenne and reduce the heat to medium-low. Simmer until the mixture is dark golden brown and reduced to a thick syrup, about 10 minutes more.

Lay the strips of bacon on the wire baking racks, making sure they don't touch. Brush the tops of the bacon with the glaze, then flip the bacon and glaze the other sides. Bake in the preheated oven until the bacon is crispy and golden brown, 20 to 25 minutes.

Remove the bacon from the oven and let it cool to room temperature on the rack, then serve.
