Here's How To Turn Leftover Pizza Into Breakfast

Why just reheat when you could also be adding tons of extra cheese?

Breakfast Pizza Bake

Makes 9 servings

recipe by Merle O'Neal

INGREDIENTS

2 tablespoons minced garlic

4 large eggs

1 cup whole milk

1 8-ouncs package shredded mozzarella cheese

1 cup shredded cheddar cheese

1 teaspoon dried oregano

1/3 cup chopped onion

½ teaspoon kosher salt

½ tablespoons freshly ground black pepper

1 teaspoon red pepper flakes (or to taste)

4-5 slices of pizza (depending on slice size)

Cooking Spray

Chopped parsley, to garnish

PREPARATION

1. Preheat oven to 350° F.

2. Mix eggs, milk, mozzarella, cheddar, melted butter, oregano, onion, salt, pepper, and red pepper flakes in a large bowl together.

3. Remove crusts from the pizza slices and chop them into squares, then transfer them into a square casserole dish sprayed with cooking spray. Pour the egg mixture over the pizza slices and bake in the preheated oven until the cheese is browned and the eggs are set but still slightly jiggly, about 45 minutes.

4. Garnish with chopped parsley, and serve!
