We Taste-Tested Late-Night College Snacks And Some Of Them Were Really Good

We get it: You’re hungry. Hack your hunger with these incredible microwave-only meals. You won’t need hacks for fast internet, though — XFINITY has you covered on that.

1. Scrambled Eggs and Cheese

You will need:

2 eggs

2 Tbsp. milk

Salt and pepper

2 Tbsp. shredded cheddar cheese (or more)

Steps: In large microwave-safe container, combine eggs, milk, salt, and pepper. Microwave uncovered on high for 45 seconds; stir. Continue cooking until eggs are almost set. Remove from microwave and stir in cheese; cover with a paper towel. Let stand until cheese has melted and eggs are set.

Verdict: Surprisingly pretty good!

2. One-bowl Mac ‘n’ Cheese

You will need:

½ cup pasta

½ cup water


¼ cup milk

½ cup shredded cheese

Any vegetables or cooked meat you’d like to add

Salsa (optional)

Steps: Combine pasta, water, and salt in microwave-safe bowl. Microwave on high for 2 minutes; stir. Keep microwaving in 2-minute intervals until the pasta is cooked (4 to 8 minutes total). Stir milk, cheese, and anything else you’re adding into the pasta. Microwave on high for 30 seconds; stir. Continue microwaving in 30-second intervals for 1 ½ minutes until the cheese has melted and formed a creamy sauce.

Verdict: Not really sure we needed so much salsa… Otherwise, A+ snack.

3. Oatmeal Cookie

You will need:

⅓ cup oats

½ banana (mashed)

½ tsp chia seeds

1 Tbsp. milk

½ Tbsp. maple syrup

½ Tbsp. cinnamon

1 tsp dark chocolate chips

Steps: Combine all ingredients except chocolate chips in small microwave-safe bowl. Stir until combined. Shape into cookie. Microwave uncovered for 1 minute. Remove from microwave and add chocolate chips to cookie by lightly pressing into top. Microwave for 40 more seconds.

Verdict: Actually delicious.

4. Chili Cheese Dog Ramen

You will need:

1 package ramen

2 hot dogs

1 can premade chili

¼ cup shredded cheddar cheese

Steps: Cook ramen according to instructions on package; drain. Top noodles with diced hot dogs, chili, and shredded cheese. Microwave on high until warm.

Verdict: This was…SO GOOD. Don’t even care. Loved it.

5. Salmon Dinner

You will need:

1 single portion salmon filet

Salt and pepper

2 Tbsp. mayonnaise

1 to 2 Tbsp. Sriracha

2 to 3 cut lemons

1 Tbsp. parsley

Steps: Rinse salmon filet with cold water; pat dry. Place skin-side down in microwave-safe container. Season with salt and pepper. In a small bowl, combine mayonnaise and Sriracha. Spread mixture over the salmon; add lemon slices and parsley. Cover tightly with plastic wrap and microwave for 3 ½ minutes.

Verdict: The world no longer makes sense, because this didn’t taste bad.

6. Potato Skins

You will need:

3 potatoes

1 Tbsp. margarine or butter

3 oz shredded cheddar cheese

3 Tbsp. bacon bits


Steps: Slice potatoes lengthwise and place skins down on microwavable plate. Carve an X into each potato. Microwave on high for 10 minutes. Remove from microwave and spread margarine or butter over potatoes. Top each potato with cheddar cheese and bacon bits. Microwave on high an additional 2 minutes. Add salt to taste. Let cool; serve.

Verdict: Great, obviously.

7. Italian Popcorn

You will need:

3 Tbsp. popcorn kernels

1 lunch-sized brown paper bag

Melted butter or margarine

Grated parmesan cheese

Garlic powder

Italian seasoning blend


Steps: Place kernels in brown paper bag and roll to close. Put bag in microwave and heat on high for 2 to 3 minutes. Top popcorn with melted butter or margarine, cheese, garlic powder, Italian seasoning, and salt.

Verdict: Super tasty! (Also, we can’t catch it in our mouths — we tried a bunch of times. Sorry.)

8. Late-night Chilaquiles

You will need:

1 egg

1 Tbsp. milk

Salt and pepper

1 Tbsp. sharp cheddar cheese

4 to 5 tortilla chips

1 Tbsp. salsa

Sour cream

Steps: Beat egg and milk with fork in microwave-safe mug, adding salt and pepper to taste. Add cheddar and stir. Break 3 to 4 tortilla chips into pieces and stir into mixture. Add salsa. Stir. Microwave on high for 1 minute and 10 seconds. Garnish with sour cream.

Verdict: Yum. (Also please note our goose mug and be jealous.)

9. Hazelnut Cake in a Mug

You will need:

4 Tbsp. flour

4 Tbsp. sugar

1 egg

3 Tbsp. cocoa powder

2 Tbsp. Hazelnut spread

3 Tbsp. milk

3 Tbsp. vegetable oil

Steps: Mix all dry ingredients in large, microwave-safe mug. Add egg, milk, vegetable oil, and Hazelnut spread and stir until smooth. Microwave for 1 minute and 30 seconds. Eat.

Verdict: Gooey. Real good.

10. Ramen and Meatballs

You will need:

1 package ramen

1 can tomato sauce

1 package frozen meatballs

Steps: Cook ramen according to instructions on package; drain. Stir in pasta sauce and frozen meatballs. Microwave on high until warm.

Verdict: This is peak ramen.

11. Chocolate Chip Cookie in a Mug

You will need:

1 Tbsp. butter

1 Tbsp. white sugar

1 Tbsp. brown sugar

3 drops vanilla extract

Pinch of salt

1 egg yolk

¼ cup flour

2 Tbsp. chocolate chips

Steps: In microwave-safe mug, melt butter in microwave. When melted, add sugars, vanilla, salt, and egg yolk. Stir. Add flour, then stir again. Add chocolate chips and stir. Microwave 40 to 60 seconds. Do not cook past one minute. Serve hot.

Verdict: Dry and generally bad. Do not make.

12. Mexican Pizza

You will need:

2 tortillas

¼ cup mozzarella cheese

¼ cup cheddar cheese

2 Tbsp. sour cream

½ cup salsa

Steps: Lay out one tortilla and spread evenly with cheeses. Microwave for 30 seconds. Place second tortilla over the first; microwave for 40 more seconds. Mix sour cream and salsa and spread over top. Cut into slices and eat.

Verdict: Solid.
