Giant Vegan Brownie Sandwich

You had me at Giant Vegan Brownie Sandwich — made with new Woolworths Plantitude range.

Ingredients:

8 x 250g Woolworths Plantitude Belgian Dark Chocolate Brownies

1L Woolworths Plantitude Dairy Free Cookies and Creme Frozen Dessert

1L Woolworths Plantitude Dairy Free Chocolate Frozen Dessert

2 tbsp coconut oil

100g dark vegan chocolate

45g salted caramel vegan chocolate

2 tbsp cocoa coated pumpkin seeds

2 tbsp nut butter protein puffs

2 tbsps freeze dried raspberries

Method:

STEP 1: Line a deep brownie dish with baking paper.

STEP 2: Slice four Woolworths Plantitude Belgian Dark Chocolate Brownies in half, down the spine. The top halves may crumble, so set aside the broken pieces in a separate mixing bowl for later. Add four of the halves to the base of the brownie tray, then use any brownie scraps to fill in the gaps. Press firmly until the brownies sticks together.

STEP 3: Scoop the Woolworths Plantitude Dairy Free Chocolate frozen Dessert over the bottom layer of brownie and, using a spatula, spread evenly until it’s one even layer. Add a sheet of baking paper on top and freeze for 30 minutes.

STEP 4: Repeat STEP 3 with the Woolworths Plantitude Dairy Free Cookies and Creme Frozen Dessert and place back in the freezer for 30 minutes.

STEP 5: Slice the four remaining Woolworths Plantitude Belgian Dark Chocolate Brownies down the spine and add them on top of the frozen dessert, then use any brownie scraps to fill in the gaps. Press firmly until the brownies sticks together. Cover with baking paper and add to the freezer for 1 hour to set.

STEP 6: Set up a double boiler on low heat and add 1 tbsp of coconut oil with dark vegan chocolate until it melts. Set aside.

STEP 7: Repeat STEP 6 with 1tbsp of coconut oil and salted caramel vegan chocolate, then set aside.

STEP 8: Remove the giant brownie ice cream sandwich from the freezer and turn out onto a wire rack. Using a spoon, swirl the melted vegan chocolate over the dessert. This will set quickly due to the temperature so you will need to act quickly. Sprinkle cocoa coated pumpkin seeds, protein puffs and crushed freeze dried raspberries on top to garnish.

STEP 9: Serve the giant vegan brownie ice cream sandwich on a wooden board and slice into squares.
