Easy One-Pot Chorizo Hash

2 tablespoons olive oil

1 1.5-pound bag The Little Potato Company Dynamic Duo potatoes, cut into 8’s

½ teaspoon salt

1 small cooking onion, diced t

½ pound (about 2 large) fresh Chorizo sausage, casings removed and crumbled

1 red bell pepper, seeded and diced

1 bunch asparagus, end trimmed and cut into 1-inch pieces

½ cup frozen corn


1. Heat olive oil in a large, deep-sided skillet over medium-high heat. Add the chopped potatoes and salt, cover, and cook, stirring occasionally, until potatoes are tender, about 10 minutes.

2. Add the diced onion, crumble in the Chorizo sausage and cook, stirring often, until onions are softened, and Chorizo is cooked through, 3 to 4 minutes.

3. Add the red pepper and asparagus and cook, stirring often, until tender, 3 to 4 minutes.

4. Add corn and cook, until warmed through, about 2 minutes.

5. Serve immediately with hot sauce.
