Potato Cake tasty Servings: 8INGREDIENTS1¼ cups cream, divided½ cup milk¼ cup mayonnaise2 large eggsKosher salt, to tastePepper, to taste4 tablespoons chopped fresh parsley, plus more for garnish6 large Nicola potatoes, cooked, peeled, and sliced1 cup grated mozzarella cheese6 strips of bacon, cooked and crumbled8 slices of ham12 slices Manchego cheesePREPARATIONPreheat the oven to 350ºF (180ºC).In a medium bowl, whisk together 1 cup of cream, the milk, mayonnaise, eggs, salt, pepper, and parsley. Set aside.Add a layer of potato slices to the bottom of an 11-inch (30 centimeter) round baking dish. Top with a layer of mozzarella cheese, bacon, 4 slices of ham, and 6 slices of Manchego. Arrange a layer of potato slices around the edge of the pan, then add another layer of ingredients on top of the first, finishing with a final layer of potatoes.Pour the cream mixture over the potato layers.Cover the dish with foil. Bake for 20 minutes, then remove the foil and bake for 10 minutes more, or until the potatoes are well browned. Unmold the potato cake onto a serving platter.
