Potato Bites Bien Tasty INGREDIENTS½ kg Cambray potatoes (or other small white potatoes)½ kg hanger steakSalt, to tastePepper, to tasteDried chile de árbol, to taste1 tablespoon oil¼ cup melted butter½ cup pesto sauce½ cup sun-dried tomatoes1 cup mozzarella cheeseMinced parsley, for garnishPREPARATION* Place the potatoes in a large pot and cover with cold water. * Bring to a boil over medium heat and cook the potatoes until tender, about 20 minutes. * Drain the potatoes and slice in half.* Season the steak with salt, pepper, and chile de árbol.* In a medium pan over medium heat, heat the oil until shimmering. Cook the steak to your desired temperature, about 6 minutes on each side for medium-rare and 10 minutes for medium-well.* Let the steak rest for 5 minutes, then cut into small cubes.* In a baking dish, arrange a layer of potatoes, cut side up. Brush with melted butter, season with salt and pepper, and then top with a layer of steak, pesto, sun-dried tomatoes, and half of the mozzarella cheese. Add another layer of potatoes, cut side down, and sprinkle with the remaining mozzarella cheese.* Heat in microwave for 5 minutes on high, until the cheese is melted and bubbling.* Garnish with parsley.* Enjoy!
