Mashed Potato Stuffed Meatloaf Cups

10 meatloaf cupsINGREDIENTSMashed Potatoes455 g (1 lb) potato, cooked and peeled2 tablespoons butter1 teaspoon salt1/2 teaspoon pepper50 g (1/2 cup) shredded parmesan cheese235 mL (1 cup) milkMeatloaf Glaze180 g (3/4 cup) ketchup2 tablespoons tomato paste55 g (1/4 cup) brown sugar1 teaspoon onion powder1 teaspoon mustard powder1 teaspoon paprikaMeatloaf1 tablespoon cooking oil150 g (1 cup) onion, diced1 tablespoon garlic, minced455 g (1 lb) ground beef, 85%/15% fat1 teaspoon salt1 teaspoon pepper1 teaspoon worcestershire sauce50 g (1/2 cup) shredded parmesan cheese10 g (1/4 cup) fresh parsley1  egg, beaten25 g (1/2 cup) panko breadcrumb60 mL (1/4 cup) milkPREPARATION1. Preheat oven to 350˚F (180˚C).2. Place cooked potatoes into a large bowl. Add butter, salt, pepper, parmesan, and a splash of milk. Mash and add more milk gradually until the potatoes are the desired texture. Set aside and let cool.3. Prepare the glaze by mixing ketchup, brown sugar, onion powder, mustard powder, and paprika in a bowl. Reserve half in a separate bowl to glaze once cooked.4. Add oil in a skillet over medium heat, followed by onions and garlic. Cook until onions are translucent and fragrant. Set aside in a bowl to cool before adding to the meat mixture.5. In a large bowl, combine ground beef, salt, pepper, worcestershire sauce, parmesan, parsley, cooled onions & garlic, egg, breadcrumbs and milk. Mix until combined.6. Using a spoon or ice cream scooper, scoop the meat mixture and place into a greased 12 cup cupcake baking tin.7. Using your fingers, spread the meat from the center to make a cup. Fill the middle with a small spoonful of mashed potatoes, and cover back up with the meat mixture.8. Generously brush half of the reserved glaze on top of the meatloaf cups generously.9. Bake for 25 minutes, reapplying the glaze halfway through. Once they are done cooking, brush with the remaining glaze that has Not been used on the raw meatloaves.10. 1 tablespoon cooking oil

150 g (1 cup) onion, diced

1 tablespoon garlic, minced

455 g (1 lb) ground beef, 85%/15% fat

1 teaspoon salt

1 teaspoon pepper

1 teaspoon worcestershire sauce

50 g (1/2 cup) shredded parmesan cheese

10 g (1/4 cup) fresh parsley

1 egg, beaten

25 g (1/2 cup) panko breadcrumb

60 mL (1/4 cup) milk

PREPARATION
