INGREDIENTS
1 pound mild Italian sausage, removed from casing
3 teaspoons Club House Italiano Blend, divided
8 tortillas, 6” size
½ cup crushed tomato
160 grams pepperoni, approximately 56 slices
240 grams fresh mozzarella, cut into pieces
PREPARATION
1) Mix the sausage meat with 2½ teaspoons of the Club House Italiano Blend evenly to combine. Then, spread the seasoned sausage meat evenly onto each tortilla, into a thin layer.
2) Heat a greased cast-iron pan or griddle over high. When hot, smash the tortillas meat side down and let cook (working in batches) for 2 minutes. Flip and cook for another 30 seconds, then transfer to a wire rack on top of a sheet pan. Repeat until all of the tortillas have been smashed and cooked.
3) Next, top each tortilla with some of the crushed tomato along with the pepperoni and pieces of mozzarella cheese to cover.
4) Place under the broiler for 1–2 minutes, or until nicely melted.
5) Finish by sprinkling the remaining Club House Italiano Blend on top of each, then fold and enjoy!
