    I'm Absolutely Drooling Over These Aussie Themed Pancake Recipes

    Tim Tam, Golden Gaytime, fairy bread or lamington — which Aussie pancake stack would you choose?

    Tim Tam Pancakes

    Makes 6 pancakes

    Ingredients

    1 cup mashed banana

    2 eggs

    1 cup milk

    2 cups self raising flour

    ¾ tsp baking powder

    6 Tim Tams, broken into pieces

    To Garnish

    1 cup whipped cream

    ½ cup chocolate ganache

    1 scoop vanilla ice cream

    4 Tim Tams, broken into pieces

    2 mint leaves

    Method

    1. In a large mixing bowl, whisk together the mashed banana, eggs and milk.

    2. Sift in the flour and baking powder into the bowl, then stir until well combined.

    3. Place a pan over medium heat and add a large spoonful of pancake batter to it, smoothing to create a large pancake. Then, sprinkle the pancake with a crumbled Tim Tam.

    4. Allow the pancake to cook until golden brown on the underside and bubbly on top, then flip and cook the other side.

    5. Remove the pancake from the pan and set aside. Repeat the process with the remaining mixture, until all pancakes are ready.

    6. To assemble the stack, take a pancake, then top with whipped cream, then add another pancake and whipped cream layer. Finish with a final pancake, then spoon over the chocolate ganache.

    7. Garnish with a scoop of ice cream, crumbled Tim Tams and a mint leaf.

    8. Enjoy!

    Golden Gaytime Pancakes

    Makes 6 pancakes

    Ingredients

    1 cup mashed banana

    2 eggs

    1 cup milk

    2 cups self raising flour

    ¾ tsp baking powder

    To Garnish

    1 cup of chocolate ganache

    1 scoop of vanilla ice cream

    ½ cup caramel sauce

    ¼ cup crumbled shortbread biscuits

    Method

    1. In a large mixing bowl, whisk together the mashed banana, eggs and milk.

    2. Sift in the flour and baking powder into the bowl, then stir until well combined.

    3. Place a pan over medium heat and add a large spoonful of pancake batter to it, smoothing to create a large pancake.

    4. Allow the pancake to cook until golden brown on the underside and bubbly on top, then flip and cook the other side.

    5. Remove the pancake from the pan and set aside. Repeat the process with the remaining mixture, until all pancakes are ready.

    6. To assemble the stack, take a pancake, then top with chocolate ganache, then add another pancake and chocolate ganache layer. Finish with a final pancake.

    7. Garnish with a scoop of ice cream, drizzle over the caramel sauce and sprinkle over crumbled shortbread.

    Fairy Bread Pancakes

    Makes 6 pancakes

    Ingredients

    1 cup mashed banana

    2 eggs

    1 cup milk

    2 cups self raising flour

    ¾ tsp baking powder

    1 cup mascarpone

    1 cup whipped cream

    To Garnish

    2 tbsp sprinkles

    Method

    1. In a large mixing bowl, whisk together the mashed banana, eggs and milk.

    2. Sift in the flour and baking powder into the bowl, then stir until well combined.

    3. Place a pan over medium heat and add a large spoonful of pancake batter to it, smoothing to create a large pancake.

    4. Allow the pancake to cook until golden brown on the underside and bubbly on top, then flip and cook the other side.

    5. Remove the pancake from the pan and set aside. Repeat the process with the remaining mixture, until all pancakes are ready.

    6. To make the cream, in a bowl mix together the mascarpone and whipped cream until well combined. Set aside.

    7. To assemble the stack, add three pancakes to the plate. Then, top with a large spoonful of the cream mixture and finish with sprinkles.

    Lamington Pancakes

    Makes 6 pancakes

    Ingredients

    1 cup mashed banana

    2 eggs

    1 cup milk

    2 cups self raising flour

    ¾ tsp baking powder

    To Garnish

    ½ cup raspberry jam

    ½ cup whipped cream

    ½ cup chocolate ganache

    2 tbsp desiccated coconut

    1 punnet of raspberries

    3. Place a pan over medium heat and add a large spoonful of pancake batter to it, smoothing to create a large pancake.

    4. Allow the pancake to cook until golden brown on the underside and bubbly on top, then flip and cook the other side.

    5. Remove the pancake from the pan and set aside. Repeat the process with the remaining mixture, until all pancakes are ready.
