Salted Caramel Cheesecake

Ingredients:
15 Subway Salted Caramel Cookies
150g unsalted butter
750g cream cheese
½ cup condensed milk
1½ cup thickened cream
2 tsp vanilla bean paste
For the caramel:
3 cups caster sugar
1 cups brown sugar
½ cup water
600ml thickened cream
1 tsp salt
Method:
STEP 1: Process Subway Salted Caramel Cookies in a food processor until they resemble fine crumbs. Add melted butter and pulse until fully combined.
STEP 2: Line a springform cake pan with baking paper and then press the crushed up cookies into the base. Use a glass to compress the base and spread the mixture up the sides to make a wall. Place in the fridge to set.
STEP 3: In a non stick saucepan over low heat add water and caster sugar and cook until melted. Adjust the heat to a medium-high and stir for 10 minutes until the mixture turns lightly golden.
STEP 4: Remove the pan from the heat and add brown sugar and cream. Stir quickly until fully incorporated and then pour into a bowl to cool down. Add a pinch of flaked salt and allow to sit.
STEP 5: In a large mixing bowl add cream cheese, vanilla essence and cream, then beat until smooth and fluffy. Gradually add the condensed milk until fully incorporated and soft peaks form.
STEP 6: Remove the prepared base from the fridge and add half of the cream cheese mix to the centre. Smooth with an offset spatula then add spoonfuls of caramel sauce and using a skewer, swirl it through the cream cheese mix.
STEP 7: Repeat STEP 7 with the leftover cream cheese and caramel sauce, and place in the fridge for 4 hours to set.
STEP 8: Once the cake is set remove from the fridge, and garnish with more caramel sauce and crushed Subway Salted Caramel Cookie pieces.
STEP 9: Enjoy
Salted Caramel Banoffee Jars

Ingredients:
10 Subway Salted Caramel Cookies
600ml thickened cream
5 bananas
2 tsp vanilla
For the caramel:
3 cups caster sugar
1 cups brown sugar
½ cup water
600ml thickened cream
1 tsp salt
Method:
STEP 1: Process 6 Subway Salted Caramel Cookies in a food processor until they resemble fine crumbs.
STEP 2: Peel 4 bananas and then add to a plate. Mash with a fork until creamy.
STEP 3: Add cream and vanilla to a bowl then whisk quickly until soft peaks form.
STEP 4: Gently fold bananas through the whipped cream mixture until incorporated.
STEP 5: In a non stick saucepan over low heat add water and caster sugar and cook until melted. Adjust the heat to a medium-high and stir for 10 minutes until the mixture turns lightly golden.
STEP 6: Remove the pan from the heat and add brown sugar and cream. Stir quickly until fully incorporated. Add a pinch of flaked salt.
STEP 7: Slice 1 banana in rounds, about 2cm wide, and then coat with caster sugar. Using a blow torch melt the sugar until it burns and forms toffee.
STEP 8: Break 2 Subway Salted Caramel Cookies in half and set aside.
STEP 9: In a mason jar layer crushed Subway Salted Caramel Cookies at the bottom, then banana slices, salted caramel sauce, and a thick layer of banana cream. This should fill the jar three quarters to full. Repeat the salted caramel sauce layer, crushed Subway Salted Caramel Cookies layer, and a small dollop of cream on top to finish.
STEP 10: Garnish the banoffee jars with caramelised banana slices ½ a broken Subway Salted Caramel Cookies, and crushed cookies pieces to serve.
