Healthy Blueberry Banana Bread

Makes: about 10 slices

INGREDIENTS

3 ripe bananas

2 eggs

½ cup 2% plain Greek yogurt

⅓ cup honey

1 teaspoon vanilla extract

1 teaspoon baking soda

1 ½ cups wheat flour

1 cup blueberries

PREPARATION

1. Preheat the oven to 350˚F (180˚C).


2. In a medium bowl, mash bananas. Mix eggs, yogurt, honey, vanilla extract, and baking soda into mixture.


3. Add flour and mix.


4. Add blueberries and gently fold into mixture.


5. Pour the batter into a greased 9x5-inch bread pan. Bake for about 50 mins, or until a toothpick comes out clean from the middle of the bread. (Baking times may vary, so keep an eye on the bread.)


6. Allow to cool for 15 minutes before serving.


7. Enjoy!

Dark Chocolate Banana Bread

Makes: about 10 slices


INGREDIENTS

3 ripe bananas

½ cup dark cocoa powder

½ cup chocolate chips

PREPARATION

1. Preheat the oven to 350˚F (180˚C).

3. Add flour, dark cocoa powder and mix.

4. Add chocolate chips and gently fold into mixture.

5. Pour the batter into a greased 9x5-inch bread pan. Bake for about 45 minutes, or until a toothpick comes out clean from the middle of the bread. (Baking times may vary, so keep an eye on the bread.)

6. Allow to cool for 15 minutes before serving!

Strawberry Cream Cheese-Stuffed Banana Bread

Servings: 12

INGREDIENTS

Cream Cheese Filling

4 ounces light cream cheese (Neufchatel), room temperature

½ cup strawberries, diced

1 tablespoon honey

Bread Batter

3 ripe bananas

2 large eggs

⅓ cup 2% plain Greek yogurt

½ cup honey

1 ½ cups wheat flour

1 teaspoon baking soda

½ teaspoon baking powder


PREPARATION

1. In a medium bowl, mix the cream cheese, 1 tablespoon of honey, and strawberries until smooth.

2. Microwave the cream cheese mixture in 30-second intervals for a total of 5 minutes, stirring between each interval. This helps cook out the moisture so that the mixture doesn’t create a large pocket of steam in the bread.

3. Preheat oven to 350°F (180°C).

4. In a bowl, mash the bananas with a fork.

5. Add the eggs and mix until well combined and frothy.

6. Add the Greek yogurt and honey, and mix until incorporated.

7. Sprinkle in the whole wheat flour, baking soda, and baking powder, and fold the batter together with a spatula.

8. Pour ¾ of the banana bread batter into a greased loaf pan, smoothing it into an even layer with the spatula.

9. Pour in the cream cheese filling, making sure to keep it away from the edge of the pan.

10. Pour the remaining banana bread batter over the cream cheese filling and smooth the top with a spatula.

11. Bake for 50-55 minutes, until the top springs back when lightly touched.

12. Let the pan cool for 15 minute before removing the loaf from the pan.

13. Allow the bread to cool at least 1 hour before slicing and serving.

Dark Chocolate Swirl Banana Bread

Makes: About 10 slices

INGREDIENTS

3 ripe bananas

2 eggs

½ cup Greek yogurt

⅓ cup maple syrup

1 teaspoon vanilla

1 cup whole wheat flour

1 ½ teaspoons baking powder

¼ cup dark chocolate chunks

PREPARATION

1. Preheat oven to 325˚F (170˚C).

2. Mash bananas in a large bowl. Add eggs and combine thoroughly. Then mix in the remaining wet ingredients: greek yogurt, maple syrup, and vanilla.

3. Next, add the whole wheat flour and baking powder and mix until fully incorporated. Be careful not to over mix.

4. In a medium, microwave-safe bowl, microwave the chocolate chunks in 30-second intervals, stirring in between, until melted and smooth.

5. Add one cup of the banana batter to the bowl of melted chocolate and fold until mixed well.

6. Pour the banana batter and the chocolate batter alternately into a greased 9x5-inch bread pan. These do not need to be even layers.

7. Using a knife or a spoon, gently swirl the batters together.

8. Bake for 40-45 minutes, or until a toothpick comes out clean from the center of the bread.

9. Allow to cool for at least 15 minutes.
