Cheesy Egg Cups
Servings: 12
INGREDIENTS
15 ounces frozen hash browns, thawed
1½ cups cheddar cheese, shredded
1 teaspoon salt
½ teaspoon pepper
1 tablespoon oil
8 eggs
3 slices bacon, cooked and crumbled
Salt, to taste
Pepper, to taste
PREPARATION
1. Preheat oven to 425°F (220°C).
2. In a bowl, combine hash browns, cheese, salt, pepper, and oil. Pack into the bottom half of the cups of a greased muffin tin.
3. Bake for 15-20 minutes, until golden brown.
4. In a separate bowl, whisk eggs with the bacon, salt, and pepper. Pour into the top half of each muffin cup.
5. Bake 15 minutes.
6. Enjoy! Or, freeze up to 1 month.
Banana Pancakes
Servings: 4
INGREDIENTS
2 large, ripe bananas
2 eggs
1 teaspoon vanilla extract
1 teaspoon cinnamon
PREPARATION
1. In a bowl, mash bananas.
2. Mix in the egg, then vanilla and cinnamon.
3. Pour pancake batter in ¼-cup amounts on a griddle or skillet over medium-high heat.
4. Cook until bubbles pop on the surface of the pancake, then flip and cook the other side.
5. Enjoy!
Sausage French Toast Roll-Up
Servings: 3
INGREDIENTS
10 slices sandwich bread
Cooked sausage links
3 eggs
1 tablespoon milk
½ teaspoon cinnamon
½ teaspoon vanilla extract
PREPARATION
1. Roll each slice of bread flat with a rolling pin.
2. Place sausage at the edge of the bread, and roll up.
3. In a bowl, combine eggs, milk, cinnamon, and vanilla.
4. Dip each roll-up in egg mixture, and pan fry in a buttered skillet until all sides are golden brown.
5. Enjoy!
Mixed Berry Parfaits
Servings: 1
INGREDIENTS
½ cup yogurt
½ cup granola
1 cup mixed berries
Honey, optional
PREPARATION
1. In a jar, layer yogurt, granola, and berries. Top with honey.
2. Refrigerate up to 2 days. If you don’t want soggy granola, wait until you’re ready to eat the parfait to add it.

Breakfast Quesadilla
Servings: 1
INGREDIENTS
2 sausage links
2 eggs, lightly beaten
1 flour tortilla, burrito-sized
½ cup cheddar cheese, shredded
PREPARATION
1. In a skillet, thoroughly cook the sausage and eggs.
2. Place mixture in the center of a flour tortilla. Top with cheese, and fold the edges inward to form a sealed pocket.
3. Heat on a skillet, seam-side down. Flip and cook until golden brown.
4. Enjoy! Or, freeze up to 1 month.
Banana Muffins
Servings: 12
INGREDIENTS
⅓ cup melted coconut oil
¼ cup maple syrup
2 eggs
¼ cup milk
1 teaspoon vanilla extract
3 ripe bananas, mashed
2 cups whole wheat flour
1 teaspoon cinnamon
½ teaspoon salt
1 teaspoon baking soda
PREPARATION
1. Preheat oven to 325°F (170°C).
2. In a bowl, whisk the coconut oil and maple syrup until combined.
3. Add the eggs, milk, and vanilla extract, and whisk until combined.
4. Fold in the bananas, cinnamon, baking soda, salt, and flour.
5. Bake 20-25 minutes. Cover and store up to 2 days.

Berry Oatmeal Cups
Servings: 12
INGREDIENTS
1 cup milk
½ cup maple syrup
2 eggs
1 teaspoon vanilla extract
1½ cups quick-cook oats
1 cup granola
1 teaspoon baking powder
½ teaspoon cinnamon
1 cup mixed berries
PREPARATION
1. Preheat oven to 350°F (180°C).
2. In a bowl, whisk all wet ingredients until fully combined.
3. Add the dry ingredients and mix thoroughly.
4. Divide mixture amongst the lined cups of a muffin tin. Top each muffin with berries.
5. Bake 25 minutes. Store covered up to 2 days.

Cinnamon Roll French Toast Roll-Up

INGREDIENTS
10 slices sandwich bread
3 tablespoons butter, melted
3 tablespoons brown sugar
2 tablespoons cinnamon
3 eggs
1 tablespoon milk

½ teaspoon vanilla extract

2. Spread the peanut butter on the bread in a smooth layer.
3. Place the bananas on the bread as ears and nose. Place the blueberries as the eyes and on the nose.

1 slice bread of choice
Peanut butter
Cream cheese
Banana, sliced
Blueberries
Strawberries, sliced
PREPARATION
1. Toast the bread to your preference.
2. Spread the peanut butter in a triangle at the top of the bread. Fill in the rest of the bread with cream cheese.
3. Place the bananas on the bread as eyes and strawberry slices as ears. Place the blueberries on the eyes and the nose.
