It depends whereabouts in the UK you are. There are some great regional dishes, but they’re not “fast food” and so are not readily available on the high street .. you’d need to seek out a good eatery, possibly a gastro pub locally. We have a lot of foreign influences that have been picked up and reinterpreted … spices were used from medieval times. When UK natives eat out, we tend to opt for other cultures’ food, because they are quicker to prep or require ingredients or equipment we don’t keep as standard in our own kitchens. And then WWII and the impact of rationing (which went on for a lot longer than you might imagine) means a whole generation forgot our own culinary history. Has nobody invited you for a home cooked meal yet? Shame on them!
