
Popcorn Shrimp Lasagna Roll-Ups
Servings: 4–6
Ingredients:
1 box SeaPak Popcorn Shrimp
10 ounces chopped frozen spinach, drained
1½ cups shredded mozzarella
1½ cups ricotta cheese
9 pieces bacon, cooked, divided
1½ cup Alfredo sauce, divided
Lasagna noodles, cooked
Preparation:
1. Preheat oven to 400ºF/190ºC.
2. Take ⅓ box SeaPak Popcorn Shrimp and bake according to package directions. Set aside.
3. Separate bacon into 7 pieces and 2 pieces and crumble into separate bowls.
4. Mix the spinach, mozzarella, ricotta, 7 pieces of the crumbled bacon, and salt until fully combined.
5. Spread ½ cup Alfredo sauce on bottom of pan. Lay out a lasagna noodle and spread spinach-bacon and a few baked SeaPak Popcorn Shrimp mixture along full length of noodle.
6. Roll up noodle and place seam-side down in casserole dish. Repeat with the rest of the noodles.
7. Top entire dish with remaining cup of Alfredo sauce, more mozzarella cheese, and the last 2 pieces of bacon crumbled up.
8. Bake for 25 minutes, then remove and top with more bacon and remaining (frozen) SeaPak Popcorn Shrimp. 9. Bake an additional 5-7 minutes.
