¾ cup all-purpose flour

1 container of PC Skyr Yogurt

½ teaspoon kosher salt

¼ teaspoon ground cinnamon

¾ cup plus 2 Tbsp. powdered sugar, divided

3 large egg whites

5 tablespoons margarine (earth balance) , melted

Nonstick vegetable oil spray

A waffle maker


Whisk flour, salt, cinnamon, and ¾ cup powdered sugar in a medium bowl. Using an electric mixer on medium-high speed, beat egg whites and remaining 2 Tbsp. powdered sugar in a large bowl to stiff, fluffy peaks. Fold dry ingredients into egg white mixture until just blended. Fold in margarine and mix until all is incorporated.

Heat iron until hot, spray center with non stick spray. Place about ¼ cup of batter in center of waffle iron and make a neat circle, bake until brown and well done

Carefully remove waffle and place on the underside of a muffin cup, then place a similar sized cup over the muffin cup to form the cup shape, leave cup on for 1-2 minutes to create a bowl, move to a cooling rack

Once cups have cooled fill each cup with 3 Tbsp. PC Skyr yogurt and garnish with berries and toppings
