S'mores Brownie Batter Cheesecake
7 tablespoons butter
10 graham crackers, finely crushed
16 oz cream cheese
1 box brownie mix
1 ½ cups heavy cream
1 bag large (jumbo) marshmallows
1.Preheat oven to 325°F/170°C
2.Place graham crackers into a plastic bag and crush them into fine crumbs with a rolling pin.
3.Pour the graham cracker crumbs into a bowl and combine with melted butter, mixing until the texture is like slightly wet sand.
4.Press the graham cracker crumbs in an even layer into the bottom of a 9-inch springform pan.
5.In a large mixing bowl combine softened cream cheese, brownie mix, and heavy cream until consistent. Use a hand mixer if necessary.
6.Transfer the mixture to the springform pan.
7.Bake in a waterbath at 325°F/170°C for 90 minutes or until cake only jiggles slightly in the middle.
8.Let cool for at least 2 hours. For smoothest results leave in powered off oven for 30 minutes, transfer to counter for an hour and move to refrigerator for an additional hour.
9.Add bag of marshmallows to top of cheesecake and broil on low for 2-5 minutes.
