Build-Your-Own Taco Bar

Staying in can be fun, especially when it comes to taco night. This Old El Paso taco bar is the ultimate weeknight meal for the whole family.



TASTY JUNIOR TACO BAR

INGREDIENTS:

Vegetarian Filling

2 teaspoons olive oil

½ cup frozen corn

1 cup cooked rice

½ cup beans

1 tablespoon taco seasoning

Chicken Filling

1 pound chicken breasts, boneless, skinless

Olive oil

1 package Old El Paso Crispy Taco Seasoning Mix

Beef Filling

2 teaspoons olive oil

1 pound ground beef

4 teaspoons taco seasoning

Toppings

Pico de gallo

Sour cream

Guacamole

Shredded cheese

Diced tomatoes

Black olives

Shredded lettuce

Lime wedges

Assembly

Taco Seasoning

1 teaspoon chili powder

1 teaspoon paprika

1 teaspoon oregano

1 teaspoon garlic powder

½ teaspoon cumin

½ teaspoon pepper

2 teaspoons salt

PREPARATION:

  1. Taco seasoning: Whisk together all ingredients.

  2. Vegetarian filling: Heat olive oil in a skillet. Add frozen corn and saute for 1 minute. Add rice, beans, and taco seasoning. Saute for 3–4 minutes. Remove from heat and set aside.

  3. Chicken filling: Cut chicken breasts into ¼-inch cubes. Drizzle olive oil over chicken. Sprinkle packet of Old El Paso Crispy Taco Seasoning Mix over chicken and toss. Heat a drizzle of olive oil in a skillet. Add chicken and sauté until cooked, about 5 minutes. Remove from heat and set aside.

  4. Beef filling: Heat olive oil in skillet. Add in ground beef and taco seasoning. Break up beef with spatula while cooking. Cook beef all the way through, stirring occasionally, 5–7 minutes. Remove from heat and set aside.

  5. Taco bar: Arrange all fillings and toppings. Serve with Old El Paso Stand ‘n Stuff Lime Taco Shells for stuffing.
