    Best Cheesy Chicken Quesadillas

    Today I would like to show you how to make Cheesy Chicken Quesadilla in just 15 minutes. This is one of my favorite Mexican recipes and probably one of the best. If you just want the recipe, skip to the end of this article

    Do you like Mexican food? And if you do, why?

    Well, let me tell you why I like it.

    First of all, it’s packed with flavors. Of course, anybody can melt some cheese and throw bits of chicken into a tortilla, then call it a chicken quesadilla recipe.

    But really, Chicken Quesadilla is a lot more than that (see more about quesadilla and its origins here)

    You’ve got the sauce, the jalapenos, peppers, avocado and the ‘queso’ (cheese). All these ingredients bring a lot of flavor and shouldn’t be disregarded. It’s kind of like a rock band where every guy in the crew matters a lot. Forget about one thing and you can mess up everything.

    But when you start listing all these ingredients it suddenly doesn’t seem easy anymore, does it?

    Well, what if I told you that this quesadilla recipe is just as easy as throwing cheese and chicken into a tortilla. It literally took me ten minutes to prep and about five to cook it. This is the second reason why I love it so much.

    You probably know by now that I love flavorful dishes that are so damn easy to cook (who doesn’t, right? 🙂 ).
And this easy Chicken Quesadilla recipe is just that. A crazy delish that you can make in no-time.

    Now, the third reason why I love this easy chicken quesadilla is because you can have it for breakfast, lunch, or dinner. Or maybe it’s just me because I love it so much 🙂

    But seriously, it’s the type of food that you can quickly gobble up in the morning before work, at lunch, or make a large batch for your weekly meal prep.

    Your kids can take it with them to school (if they still do that 🙂 ) and also you can have it for dinner on your movie nights (my favorite one yet).

    This Chicken Quesadilla is also great for parties because it’s so quick and easy to make. Be sure to make plenty of it as I am certain everybody will go crazy for it.

    And if you have a big party, then you might want to add these easy Avocado Toasts along with the Chicken Quesadillas.

    So the Cheesy Chicken Quesadilla is incredibly versatile, isn’t it?

    That’s why I think it’s the best chicken quesadilla recipe I’ve seen in a while.

    You can make it with chicken or turkey leftovers. Or, you can buy rotisserie chicken, shred the breast and use that.

    Also, you can play around with the ingredients. Use your favorite cheese, or sauce.
If you like it really spicy, then you can go for hot peppers or some hot chili sauce.

    Easy Cheesy Chicken Quesadilla Recipe

    Servings: 1

    Prepping + Cooking Time: 15 min

    Ingredients:

    * 1 cup rotisserie chicken Shredded

    * 1/2 mango Diced

    * 1/2 avocado Sliced

    * 1 medium tomato Sliced

    * 1 spring onion Sliced

    * 1/2 cup grated cheese

    * 2 medium flour corn tortillas

    * 1/2 Tbsp vegetable oil

    Instructions:

    # Heat olive oil in a large skillet at medium-low heat.

    # Place one tortilla sheet on the pan, then top with chicken, mango, spring onion, tomato, avocado and cheese.

    # Season with salt and pepper to your taste, then cover with a second tortilla.

    # Cook until golden-brown, about 3 minutes. Flip it on the other side, using a spatula (it might get messy the first time, but you'll get better in time 🙂 ) and cook for an additional 2 minutes.

    # Drizzle with your favorite sauce and garnish with green onions.
