2. Poached Egg on Toast

"Breakfast is my favorite meal of the day tbh (although some mornings I have no desire to eat). Lately, I've been preparing frittatas so I have something I can just heat up in the morning as a time saver. Another simple favorite is poached eggs on toast; if I'm feeling extra fancy, I use goat cheese on the toast instead of butter."

5. Greek Yogurt With Peaches, Blueberries, Shredded Coconut, and Maple Syrup

"I start every day with a homemade latte (and I’ve probably got about 20 different variations of that), and then usually have either Greek yogurt with fruit and granola, peanut butter and banana slices on dark Russian rye toast, or a smoothie bowl. The key is always to have a solid mix of protein, fruit, and fiber to start my day off right, plus a boost of caffeine so my brain can handle morning meetings."

10. Cucumber Rounds with Laughing Cow Cheese and Smoked Salmon

"I eat on the ~healthier~ side, but this is one of my favorites. I do cucumber rounds spread with Laughing Cow cheese wedges, topped with red onion slices, capers, and smoked salmon. I also love this combo on whole wheat toast if I feel like having more carbs. :)"

11. Modified Monte Cristo Sandwich

"I do a variation on a Monte Cristo. I make two pieces of French toast with a lot of cinnamon in the egg wash, and only cook one side to brown. Then, I place ham and a small bit of Swiss cheese in between with the non-browned sides outside and grill it up like a grilled cheese sandwich to heat the meat and cheese. Delicious."

"Here in Melbourne, Australia, my favourite brekky is a Vietnamese bahn mi roll: two wok fried eggs in a French baguette roll with carrot, chili, cucumber, coriander (cilantro), a splash of soy, and a smear of paté. With a flat white coffee. Divine."
