Yes! Oatmeal and eggs are super quick, for a great frittata all you need is to slice some tomato and asparagus (5 min), mix with eggs and arugula (1 min), and cook (5 min). Prepping baked oatmeal or mini quiches like you do (or even pancake batter-make a batch to use throughout the week and keep in fridge in between uses) is relatively easy to do in one go when you have the time. Totally feasible; I like to have the frittata for lunch because I can’t eat much in the morning (usually I just have a grapefruit and coffee).
I can’t believe that a HAES “nutritionist” is referenced here. These people kill people with medically erroneous advice.
