Quinoa Salad 4 Ways

Thai Quinoa Salad
Servings: 2-4
INGREDIENTS
Salad
1 cup water
1 cup vegetable stock
1 cup quinoa
2 carrots, shredded
1 red bell pepper, diced
1 cucumber, quartered
1-2 cups shredded red cabbage
½ small red onion, diced
½ cup edamame
Green onion, to serve
Crushed peanuts, to serve
Dressing
½ cup water
1 teaspoon sesame oil
1 tablespoon soy sauce
1 tablespoon ginger, grated
2 teaspoons olive oil
1 tablespoon honey
¼ cup peanut butter
PREPARATION
In a small saucepan bring water and vegetable stock to a boil then add quinoa, cover and simmer for 12-15 minutes.
In a bowl combine quinoa, carrots, red pepper, cucumber, purple cabbage, and edamame.
In a small bowl, mix water, sesame oil, soy sauce, ginger, olive oil, honey, and peanut butter. Drizzle dressing over the quinoa.
Top with green onions and crushed peanuts, and enjoy!

Mushroom and Garlic Quinoa Salad
Servings: 2-4
INGREDIENTS
2 tablespoons olive oil
1 pound mushrooms
1 tablespoon thyme
1 teaspoon salt
3 cloves garlic, minced
1½ cups vegetable stock
1 cup water
1 cup quinoa
Grated cheese of choice, to serve
PREPARATION
In a medium-sized frying pan combine oil, mushrooms, thyme, and salt, then mix. Allow to cook about 5 minutes then add the garlic, cook for 6-8 more minutes minutes until mushrooms are sufficiently cooked through and beginning to crisp up. Set mushroom mixture aside.
Combine vegetable stock and water in pan, bring to a boil, then add quinoa and cover, Simmer for 12-15 minutes, then add mushroom mixture to quinoa.
Garnish with grated cheese of your choice and enjoy!

Summer Fruit Quinoa Salad
Servings: 2-4
INGREDIENTS
1 cup water
1½ cups orange juice
1 cup quinoa
Strawberries
Blueberries
Mangoes, cubed
Basil, chopped, for garnish
Dressing
½ cup lime juice
1 tablespoon honey
PREPARATION
In a small saucepan bring water and orange juice to a boil then add quinoa, cover and simmer for 12-15 minutes.
In a bowl combine quinoa, strawberries, blueberries, and mangoes.
In a small bowl, mix lime juice, and honey. Drizzle dressing over the quinoa.
Top with basil, and enjoy!

Southwestern-Style Quinoa Salad
Serves: 2-4
INGREDIENTS
2 tablespoons oil
3 cloves garlic, minced
1 jalepeño, minced
15 ounces black beans
15 ounces corn
3 roma tomatoes, minced
1 cup quinoa
2 cups vegetable stock
1 tablespoon chili powder
2 teaspoons cumin
1 teaspoon salt
1 teaspoon pepper
1 avocado, cubed
1 lime, juiced
Cilantro, to garnish
PREPARATION
In a frying pan, combine oil, garlic, and jalepeño cook for about 2 minutes.
Add the black beans, corn, tomatoes, quinoa, vegetable stock, chili powder, cumin, salt, and pepper, then mix and cover. Cook for 15-20 minutes.
Top mixture with avocado and lime juice.
Garnish with cilantro and enjoy!
