Bacon, Cauliflower, And Kale Breakfast Scramble

Supercharged Paleo breakfast will take you straight to that One PM lunch. The chewiness of the bacon and slight crunch of the kale keep this dish from being another mushy-soft breakfast.

Bacon, Cauliflower, and Kale Breakfast Scramble

2 eggs whisked together w/1 Tbs water

2 slices of bacon

1 cup cauliflower, riced or chopped small

1 cup kale, chopped

1 Tbs grass fed butter

salt and pepper

3. Assemble Your Ingredients


Before you begin cooking, gather together the above ingredients and keep them close to the stovetop. This delicious recipe cooks quickly. Double, triple or quadruple ingredients if cooking for more people.

4. Bacon


Sauté 2 strips of bacon in a medium-sized pan on medium heat. Remove cooked bacon from the pan but leave 1 Tbs of the fat in the pan. If cooking with bacon fat grosses you out, wipe it out and melt 1 Tbs butter.

5. Cauliflower looks like Hash Browns ... tastes better


Sauté 1 cup of cauliflower in the fat on medium heat. Cook for 3-4 minutes until softened, and the edges are brown. Put into your serving dish.

6. Kale: Eat Your Veggies


Put 2 Tbs grass-fed butter into the pan and melt. Sauté 1 cup chopped kale for 2-3 minutes on medium heat. It doesn't wilt, thus giving this egg dish a slightly crunchy texture.

9. Let's Eat!


Place your Scramble next to the cauliflower and enjoy your Paleo breakfast!
