Ingredients
1 400-gram package The Meatless Farm mince
1 tablespoon olive oil
125 grams white onion, sliced
150 grams tomatoes, roughly chopped
1clove garlic, finely chopped
125 grams yellow bell pepper, sliced
125 grams green bell pepper, sliced
Β½ teaspoon oregano
1 teaspoon cumin
1 teaspoon garlic powder
1 tablespoon mild chilli powder
1 tablespoon smoked paprika
Pinch sea salt
1 400-gram tin black beans, drained
120 millilitres water
Coconut Lime Crema
80 millilitres coconut yogurt
Juice of half a lime
ΒΌ teaspoon lime zest
To Serve
10 grams coriander, roughly chopped
1 avocado
Preparations
Heat oil in a large pan over medium heat.
Cook onion, tomato, garlic, bell peppers, and spices until they begin to soften, about 5 minutes.
Add Meatless Farm mince, stirring constantly, cooking for 4β6 minutes, or until browned.
Add black beans and water. Cover and let simmer for 5 minutes.
Make the coconut lime crema: In a small bowl, combine coconut yogurt, lime juice, and lime zest. Set aside.
Top fajita mixture with coconut lime crema, chopped coriander, and avocado.
