INGREDIENTS:
1½ teaspoons Marie’s Creamy Avocado Poblano Dressing
1½ fresh salmon, 4 fillets
2 teaspoons coriander
1 teaspoon salt
1½ teaspoons cumin
½ fresh avocado, sliced
4 burger buns
Fresh cilantro, chopped
PREPARATION:
1. Cut salmon into 2-inch pieces. Transfer ⅓ of salmon to a food processor and process, scraping down sides, until mixture is very smooth and paste-like. Add remaining salmon and pulse 4–5 times until pieces are no bigger than ¼ inches (be careful not to make it too smooth). Transfer to a large bowl.
2. Gently fold in spices, Marie’s Creamy Avocado Poblano Dressing, and salt. Shape into 4 burger patties.
3. Heat 1½ teaspoons of oil in a cast-iron skillet over medium. Once oil is hot, add salmon burgers to pan. Sear for 3–4 minutes on each side until cooked through.
Slaw
INGREDIENTS
1 cup of shredded cabbage
½ small carrot, shredded
½ red bell pepper, finely sliced
2 tablespoons Marie’s Creamy Avocado Poblano Dressing
Mix all slaw ingredients in bowl.
ASSEMBLY:
Toast brioche buns in pan. Dress bottom bun with Marie’s Creamy Avocado Poblano Dressing, then place salmon burger on top. Layer with sliced avocado, slaw, and chopped cilantro.
