Pineapple Honey Simple Syrup

3 cups pineapple chunks

½ cup honey

½ cup water

1 sprig rosemary

Pineapple Lime Juice
1½ cup canned pineapple juice

1 cup fresh lime juice

1 bottle (750ml) gin

Rosemary sprig for garnish

Honey comb for garnish


1. To prepare the simple syrup, combine the honey, water, pineapple chunks, and rosemary in a sauce pan. Simmer 20 minutes, until all the honey is dissolved.

2. Puree mixture in a blender. Strain the mixture through a sieve and chill until cold.

3. Combine pineapple juice with the fresh lime juice. Strain through a sieve.

4. Combine gin, 2½ cups pineapple lime juice and 1½ cups simple syrup in a pitcher or punch bowl.

5. Chill until very cold.

6. Serve in coupe glasses. Garnish with rosemary sprig and honey comb.
