MEXICAN OMELET PACKET

Serves 1

INGREDIENTS:

½ cup mushrooms

¼ cup peppers

½ cup onions

¼ cup black olives

½ cup tomato

2 eggs

¼ cup shredded cheese

1 tsp salt

1 tsp pepper

¼ tsp cayenne

Special Equipment

Aluminum foil

Cooking Spray

PREPARATION:

1. Set grill 1.5 ft / .5 m above flame.

2. Spray aluminum foil generously with cooking spray.

3. Combine all ingredients in foil packet, and wrap tightly.

4. Cook above fire for 8 - 12 min.

CHICKEN VEGGIES PACKET

Serves 1

INGREDIENTS:

½ ear of corn

½ cup peppers

½ cup mushrooms

1 chicken breast

2 garlic cloves

¼ cup olive oil

1 tsp garlic powder

½ tsp red pepper

1 tsp basil

1 tsp salt

Special Equipment

Aluminum foil

PREPARATION:

1. Set grill 1.5 ft / .5 m above flame.

2. Combine all ingredients in foil packet, and wrap tightly.

3. Cook above fire for 20 - 25 min.

SALMON POTATO PACKET

Serves 1

INGREDIENTS:

1 sweet potato

1 salmon filet

1 tsp salt

1 tsp pepper

½ cup olive oil

1 lemon slice

1 sprig rosemary

Special Equipment

Aluminum foil

PREPARATION:

1. Set grill 1.5 ft / .5 m above flame.

2. Combine all ingredients in foil packet, and wrap tightly.

3. Cook above fire for 25 - 30 min.

FRUIT COBBLER PACKET

Serves 1

INGREDIENTS:

1 cup blueberries

1 cup sour cherries

3 tbsp butter

1 packet oatmeal

PREPARATION:

1. Set grill 1.5 ft / .5 m above flame.

2. Combine all ingredients in foil packet, and wrap tightly.

3. Cook above fire for 8 - 12 min.
