Bring to a simmer, stirring occasionally to dissolve sugar. Simmer for 15 minutes or until reduced to a jammy consistency. Remove from heat and set aside.2.Crumb topping: Place brown sugar, flour, and butter in a medium bowl. Use fingers to break the butter down into small pebble-size pieces. Mix in cranberries, chopped white chocolate, and flaky salt. Set aside.3.Preheat oven to 350ºF (325ºF for convection).4.Cake: In a large bowl, mix softened butter, white sugar, and brown sugar with a hand mixer. Mix in flour, baking powder, and kosher salt. Mix in milk, egg, and vanilla extract until batter is smooth. Fold in chopped white chocolate. 5.Pour half the batter into a greased 9x13-inch baking dish. Spread evenly with a spatula. Dollop half of the cranberry jam on the batter and use a knife to swirl the jam in. Pour in the rest of the batter, then dollop and swirl the rest of the jam. Evenly sprinkle the crumb topping over the cake. 6.Bake cake for 30–35 minutes or until a toothpick inserted into the middle comes out clean. Remove from oven and let cool for at least 10 minutes before slicing.
