Pecan Pie Brownies

INGREDIENTS:
BROWNIE

¾ cup flour

¾ cup sugar

6 tablespoons cocoa powder

1 teaspoon kosher salt

½ cup unsalted butter, softened

2 eggs

1 teaspoon vanilla extract

PECAN TOPPING

½ cup brown sugar

⅓ cup light corn syrup

2 eggs

2 teaspoons vanilla extract

1 teaspoon kosher salt

¼ cup unsalted butter, melted

2 cups pecan halves

Preparation:

1.Preheat oven to 350ºF (325ºF for convection).

2.Brownies: Prepare an 8x8-inch baking dish. Spray with cooking spray and then line with parchment so the excess parchment hangs over the two sides.

3.In a medium bowl, whisk together flour, sugar, cocoa powder, and kosher salt. Add in butter, eggs, and vanilla extract. Beat with a hand mixer until just combined.

4.Transfer batter to prepared baking dish. Set aside.

5.Pecan topping: Whisk together brown sugar, light corn syrup, eggs, vanilla extract, and kosher salt. Whisk in melted butter. Fold in pecans. Pour mixture on top of brownie batter and spread evenly.

6.Bake for 40 minutes.

7.Remove from oven and let cool completely before slicing. Slice with a serrated knife for best results.
