Hot Chicken Mac 'N' Cheese

Ingredients:
Chicken
11⁄2 cups buttermilk
1⁄4 cup hot sauce
2 tablespoons salt, divided
2 boneless skinless chicken breasts, cut into strips
11⁄2 cups panko, toasted
2 tablespoons grated parmesan
1 teaspoon salt
Hot Chicken Oil
1⁄2 cup vegetable oil
2 teaspoons cayenne
1 tablespoon brown sugar
1 teaspoon garlic powder
1 teaspoon paprika
1⁄2 teaspoon salt
Mac and Cheese
1⁄4 cup butter
1⁄4 cup all-purpose flour
1⁄2 teaspoon salt
1⁄8 teaspoon black pepper
2 cups milk
2 cups shredded cheddar cheese plus 1⁄2 cup for topping
1 pound elbow macaroni, cooked until al dente package instructions
2 tablespoons hot sauce
1⁄2 teaspoon paprika
1 teaspoon chopped chives

Preparation:
1. Preheat upper oven in LG Combi Wall Oven to 400 degrees F on the convection bake setting.
2. Chicken: In a medium bowl, whisk together buttermilk, hot sauce, and 1 tablespoon salt.
Add chicken and fold to coat. Let chicken marinate for at least an hour. Place a strainer
over a bowl and pour chicken into the strainer to quickly drain the marinade.
3. In a shallow bowl, combine toasted panko, Parmesan, and 1 tablespoon of salt.
4. Dredge each piece of chicken in the breading until evenly coated, and place on a small
sheet pan with a cooling rack.
5. Bake in the upper oven for 20 minutes, turning halfway through until internal temperature
of the chicken reaches 165oF.
6. Hot Chicken Oil: In a small pot over low heat, combine 1⁄2 cup vegetable oil, cayenne, brown sugar, garlic powder, and paprika. Heat until lightly bubbling, stirring occasionally, then remove from heat.
7. Preheat lower oven to 400oF on the convection bake setting ( or 425 degrees on regular bake setting).
8. Melt butter in a saucepan over medium heat; stir in flour, salt, and pepper until smooth. Slowly pour milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Add 2 cups cheddar cheese and stir until cheese is melted, 2 to 4 minutes. Stir in hot sauce.
9. Fold cooked macaroni into cheese sauce until coated.
10. Pour macaroni in a baking dish, and top with 1⁄2 cup shredded cheese. Place chicken on
top and drizzle with the hot oil mixture. Cook for 5-10 minutes until cheese is melted.
11. Sprinkle with paprika and chives and serve immediately.
