Mayonnaise
Makes: 1 jar (300 milliliters)

Ingredients
1 egg yolk
1 tablespoon dijon mustard
20 milliliters white wine vinegar
1 pinch Cayenne pepper
1 pinch fine salt
250 millilitres lightly flavoured vegetable oil

Preparations

  1. Separate the egg yolks from the whites and add the yolks to a deep mixing bowl.
  2. Add dijon mustard, white wine vinegar, season with a pinch of Cayenne pepper and salt.
  3. Start to whisk and add the oil drop by drop at the beginning, then in a thin steady stream.
  4. Continually whisk until you have incorporated all of the oil and the mixture is thick and light in colour.
  5. Enjoy your homemade Mayonnaise!


Tartare sauce
Makes: 140 millilitres

Ingredients
125 millilitres mayonnaise
30 grams capers, finely chopped
20 grams tarragon, parsley, chives finely chopped
2 hard boiled egg yolks, finely chopped
Salt and pepper to taste

Preparations

  1. Prepare a mayonnaise.
  2. Mix all the ingredients together.
  3. Reserve in a covered container in the refrigerator until later use or enjoy straight away!


Sauce Rémoulade
Servings : 140 millilitres

Ingredients
125 millilitres mayonnaise
10 grams Dijon mustard
15 grams capers, finely chopped
15 grams gherkins, finely chopped
10 grams herbs (parsley, tarragon, chives) finely chopped
15 grams onions, finely chopped
1 teaspoon Anchovy essence
Salt and pepper to taste

Preparations

  1. Prepare a mayonnaise.
  2. Mix all the ingredients together.

  3. Reserve in a covered container in the refrigerator until later use or enjoy straight away!


Sauce Cocktail

Ingredients
125 millilitres sauce mayonnaise
40 grams tomato ketchup
1 teaspoon Worcestershire sauce
1 teaspoon Tabasco
1 teaspoon Brandy
Salt & pepper to taste
