THE ULTIMATE HOLIDAY BASH CREAMY SHRIMP SCAMPI DIP

Servings: 4–6

INGREDIENTS:

  • 2 tablespoons HemisFares Spanish Cornicabra Extra Virgin Olive Oil 12 ounces Argentinian Pink Shrimp Easy Peel, XL
  • 4 cloves garlic, minced
  • 1⁄4 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1⁄4 teaspoon pepper
  • 3 tablespoons chicken broth
  • 2 tablespoons lemon juice
  • 4 ounces cream cheese, softened
  • 1⁄4 cup sour cream
  • 1⁄4 cup mayonnaise
  • 3⁄4 cup shredded mozzarella cheese
  • 2 tablespoons minced parsley, plus extra for garnish

PREPARATION:

  1. Preheat oven to 350oF.

  2. Peel and chop shrimp.

  3. Heat the olive oil in a skillet over medium-high heat. Add the shrimp, garlic, red pepper flakes, salt, and pepper. Quickly saute shrimp for a minute (shrimp will cook very fast), then pour in chicken broth and lemon juice. Simmer for 30 seconds, then remove pan from heat.

  4. Stir in cream cheese, sour cream, mayonnaise, mozzarella, and parsley. Pour dip into a greased 1-quart baking dish.

  5. Bake for 10 minutes until dip is bubbling. Sprinkle with extra minced parsley and serve with toasted baguette.

COCONUT MANGO MOCKTAIL

Servings: 2

INGREDIENTS:

  • 2 limes, each cut into 8 chunks
  • Leaves of 6 mint sprigs
  • 16 ounces Simple Truth Organic Mango Coconut Water

PREPARATION:

  1. Place half of the lime chunks in a pint glass along with the mint leaves. Muddle ingredients until juice has been extracted from the limes. Add the rest of the lime chunks and continue to muddle. Strain mixture.

  2. Fill 2 tall glasses with ice. Pour lime juice over ice. Pour 8 ounces mango-flavored coconut water into each glass. Garnish with lime wheels and mint sprigs.
