Spicy Cabbage Soup

You’ll need:

32 ounces Simple Truth Organic Low Sodium Free Range Chicken Broth

14.5 ounces Simple Truth Organic Fire Roasted Diced Tomatoes

1 cup Simple Truth Organic Whole Carrots, chopped

1 cup Simple Truth Organic Celery Hearts, chopped

1 cup yellow onion, diced

1/4 cup hot sauce

1 tablespoon paprika

1/2 tablespoon onion powder

Salt and pepper

3 cups cabbage, shredded

In a large cooking pot over high heat, combine low-sodium chicken broth, fire-roasted tomatoes, carrots, celery hearts, and onion, then bring to a boil. Once boiling, stir in hot sauce, paprika, onion powder, salt, and pepper. Bring heat down to medium, then add shredded cabbage. Cover pot, and simmer for approximately 40 minutes or until vegetables are tender. Upon serving, add additional pepper, hot sauce, and optional peeled hard boiled egg for a boost of protein.

Open-Faced Avocado Chicken Salad Sammies

You’ll need:

2 cups Simple Truth Natural Boneless Skinless Chicken Breast, cooked and shredded

1/2 cup red onion, diced

2 ripe avocados, pitted

2 tablespoons Simple Truth Organic Baby Dill, chopped

1 teaspoon onion powder

1/3 cup Simple Truth Organic Strained Plain Nonfat Greek Yogurt

1 1/2 tablespoons lemon juice

In a medium bowl, mix together shredded chicken breast, red onion, avocado, dill, onion powder, and nonfat Greek yogurt until thoroughly combined. Spritz with lemon juice to avoid browning and refrigerate. Upon serving, toast a slice of whole grain bread and top with optional seedless raisins or sliced grape tomatoes.

Mini Eggplant Pizzas

You’ll need:

1 medium eggplant


2 cups Simple Truth Organic Pizza Sauce

2 tablespoon Simple Truth Organic Basil Leaves

1 cup Simple Truth Organic Chopped Spinach

3/4 cup Simple Truth Organic Sliced White Mushrooms, chopped

1 cup Simple Truth Organic Finely Shredded Mozzarella Cheese

1/2 cup Simple Truth Organic Grated Parmesan Cheese

2 ounces Simple Truth Uncured Pepperoni Slices (optional)


Preheat oven to 400°F. Wash and dry eggplant, then slice half-inch sections for pizza base and lay out on greased cookie sheet. With paper towel, blot the eggplant for excess water and sprinkle salt on top. In medium mixing bowl, combine pizza sauce, basil leaves, chopped spinach, and mushrooms. Spoon sauce mixture onto eggplant bases, then top with finely shredded mozzarella and grated Parmesan cheese. Add uncured pepperoni slices if desired and then place in oven for 20 minutes or until cheese is a gooey, golden brown.

Sweet Potato Turkey Burgers and Steamed Veggies

You’ll need:

1 large sweet potato

1 package Simple Truth Natural Turkey Burger Patties

1 cup lettuce, shredded

Simple Truth Organic Tomato Ketchup

Simple Truth Organic Yellow Mustard

Simple Truth Organic Mayonnaise

10 ounces Simple Truth Frozen Mixed Vegetables


Preheat oven to 350°F. Wash and peel large sweet potato, slice longways, and place on greased baking sheet. Place sweet potato slices in oven for 20 minutes or until slightly crispy. Cook turkey burgers according to packaged instructions and construct burgers with desired toppings using sweet potato slices as the bun. Upon serving, steam mixed vegetables according to instructions as an additional and tasty side!

Zucchini Burrito Boats

You’ll need:

1 1/2 cups Simple Truth Organic Red Quinoa

1 green pepper, diced

15 ounces Simple Truth Organic Black Beans

15 ounces Simple Truth Organic Super Sweet Whole Kernel Corn

1 cup Simple Truth Organic Medium Salsa

1 taco seasoning packet

3 large zucchini squash

3/4 cup Mexican Style Blend Finely Shredded Cheese

1 avocado, pitted and diced

Hot sauce (optional)


Preheat oven to 375°F. Prepare organic red quinoa according to packaged instructions. In large cooking pan over medium heat, combine pepper, black beans, corn, and 1/2 cup salsa. When vegetables are tender, add cooked red quinoa and taco seasoning packet into the pan. Wash and slice zucchini longways, then scoop out the centers and place on a nonstick cooking sheet. Spoon mixture into the zucchini boats, top with finely shredded cheese, then bake for 15–20 minutes or until cheese melts. Upon serving, top with diced avocado, additional salsa, and hot sauce.

Dairy-Free Overnight Oats

You’ll need:

1 cup Simple Truth Whole Grain Rolled Oats

1/3 cup Simple Truth Unsweetened Almond Milk

1 ripe banana, mashed

1/2 cup Simple Truth Frozen Triple Berry Medley

1/3 cup Simple Truth Unsweetened Applesauce

1 scoop protein powder (optional)


In an overnight container, alternate between adding layers of whole grain rolled oats, almond milk, mashed banana, triple-berry medley, and applesauce, then refrigerate overnight. If desired, add one scoop of protein powder in between layers. Upon serving, oats can be eaten chilled or warmed in the microwave for approximately one minute.

Quick and Easy Egg White Bites

You’ll Need:

12 ounces Simple Truth Traditional Turkey Sausage Links

16 ounces Simple Truth Free Range 100% Egg Whites

1 tomato, diced

1 cup Simple Truth Organic Chopped Spinach

3/4 cup Simple Truth Sharp White Cheddar Cheese

Hot sauce (optional)


Preheat oven to 375°F. Prepare turkey sausage links according to packaged instructions, then chop. In a greased muffin tin, add egg whites, sausage, tomato, and spinach. Sprinkle finely shredded cheddar cheese on top, then cook in oven for 10–13 minutes or until eggs are thoroughly cooked, then refrigerate until serving. To reheat egg white bites, place in microwave for approximately 30 seconds and enjoy with hot sauce if desired!

Homemade Strawberry Froyo

You’ll Need:

10 ounces Simple Truth Organic Frozen Whole Strawberries

3 tablespoons Simple Truth Organic Honey

2 tablespoons lime juice

3/4 cup Simple Truth Organic Strained Plain Nonfat Greek Yogurt


Add frozen strawberries, honey, lime juice, and Greek yogurt into a blender, and blend until smooth. Add water, additional yogurt, or fruits to reach a desired consistency, then freeze or refrigerate until serving!

Greek Yogurt Chocolate Chunk Banana Bread

You’ll Need:

3 ripe bananas, mashed

1 Simple Truth Natural Cage Free Grade A Large Brown Egg

1/2 cup Simple Truth Organic Strained Plain Nonfat Greek Yogurt

1 cup Simple Truth Organic 72% Cacao Dark Chocolate Chunks

2 teaspoons vanilla extract

1 cup Simple Truth Organic All Purpose Flour

1/4 cup sugar substitute

1/2 teaspoon baking soda

1 tablespoon baking powder

1/2 teaspoon salt


Preheat oven to 350°F. In a large mixing bowl, combine mashed bananas, egg, Greek yogurt, chocolate chunks, and vanilla until thoroughly combined. In a separate bowl, combine the dry ingredients then gradually add into the large mixing bowl. Pour batter into a greased bread pan and cook for 50 minutes to an hour or until bread is cooked through. Let the bread cool for 20 minutes before removing from the pan.
