Remove the rolls from oven and place chicken strips over the bottom half of the rolls. Set the top rolls aside. Place chocolate chips in a small bowl and microwave in 10- to 15-second increments, stirring in between, until fully melted.
Stick one ball of dough on the end of a toothpick or skewer, and dip into the chocolate. Drain excess chocolate over the bowl and set the cookie dough back onto the baking sheet. Repeat with remaining balls of dough.
Before chocolate has solidified, top each “truffle” with sprinkles — try decorating them with your favorite team’s colors! When finished decorating, refrigerate until set, about 20 minutes. Keep in the fridge until serving.
