Cranberry Orange Mimosa
- 2 cups cranberries, fresh or frozen
- 1 cup water
- 2 sprigs rosemary
- 2 cups orange juice
- 1 bottle Simple Truth Organic Prosecco 1 orange
- Rosemary spears, for garnish
Place cranberries, water, and rosemary in a small pot. Bring to a simmer. Let simmer for
5 minutes. While simmering, crush cranberries with a small potato masher or a fork. Strain through a sieve, pushing any excess liquid through with a spatula. Let cool completely.
Pour orange juice in a small pitcher. Stir in cooled cranberry liquid.
Fill a champagne glass a 1/3rd of the way with cranberry-orange juice. Fill the rest of the way with Simple Truth Organic Prosecco.
Orange twist: Slice the orange in 1⁄2-inch-thick rounds. Using a small paring knife, cut the orange slice almost in half by starting your cut just below the top rind (where the pulp begins) and slicing through the bottom of the round. Then cut out all of the pulp so you are left with just a long strip of peel. Twist the peel into a curly-q shape and press the curl between two fingers so that the peel holds its shape. Garnish mimosas with orange twist and a rosemary spear.
