Cauliflower Tzatziki Chicken Salad

INGREDIENTS:

1 cup Simple Truth™ Plant Based Tzatziki Cauliflower Dip

1 Simple Truth Cold Deli Whole Rotisserie Chicken, 3.4 pounds, shredded (about 3 cups)

1 cup cucumber, diced 

½ cup red onion, diced

1 bunch Simple Truth Organic™ Chives, chopped

Salt and pepper to taste

Simple Truth Organic™ Living Butter Lettuce, for serving 

DIRECTIONS:

In a large bowl, stir together Simple Truth Tzatziki Cauliflower Dip and shredded chicken, followed by all of the remaining ingredients (cucumber, onion, and chives). Taste and season as you prefer. Scoop chicken salad onto pieces of Simple Truth Living Butter Lettuce and serve as a lettuce cup! This can be made ahead and kept in the fridge for up to 5 days.

Roasted Brussels Sprouts with Pistachios, Bacon, and Cranberries

INGREDIENTS:

1 package Simple Truth Organic™ Brussels Sprouts

1 tablespoon Simple Truth Organic® Filtered Extra Virgin Olive Oil

½ teaspoon Simple Truth Organic™ Raw Unfiltered Apple Cider Vinegar with Mother

Salt and pepper, for seasoning 

⅓ cup Simple Truth™ Roasted & Salted No Shell Pistachios, chopped 

3 slices Simple Truth® Thick Sliced Uncured Hardwood Smoked Bacon, cooked and chopped

1 package Simple Truth Organic™ Premium Sweetened Dried Cranberries

DIRECTIONS:

Preheat the oven to 425ºF. Prepare the Simple Truth Organic™ Brussels Sprouts according to the instructions on the package by steaming in the microwave. 

Toss the steamed Brussels sprouts with olive oil, apple cider vinegar, salt, and pepper. Place on a baking sheet lined with aluminum foil and bake for 10 to 15 minutes or until crispy. Remove from the oven and toss with pistachios and bacon. 

Place on a serving tray and top with a handful of cranberries. Serve and enjoy!

Chickpea Pasta Alfredo Bake

INGREDIENTS:

Simple Truth Organic® Gluten Free Chickpea Fusilli Pasta

Simple Truth™ Italian Chicken Sausage Links, sliced 

1 tablespoon Simple Truth Organic® Filtered Extra Virgin Olive Oil

Simple Truth Organic® Broccoli Florets

1 jar Simple Truth™ Plant Based Alfredo Vegan Pasta Sauce

¼ cup Simple Truth Organic® Grated Parmesan Cheese

DIRECTIONS:

Prepare the Simple Truth Gluten Free Chickpea Pasta according to the instructions on the package, but reduce the cooking time by 2 minutes. Drain and set aside. Preheat the oven to 375ºF. 

In a large pot, sauté the sliced Simple Truth Italian Chicken Sausage Links in olive oil until browned, about 5 minutes. Add the broccoli florets to the pan and continue cooking 5 minutes further. Add the entire jar of Simple Truth Plant Based Alfredo and stir to combine. Season with a pinch of salt and pepper, and simmer for 5 to 10 minutes, then add the drained pasta and stir to combine. 

Grease a 9x13 casserole dish with cooking spray. Add the pasta to the dish and top with grated Parmesan. Cover with aluminum foil (note: at this point, you could refrigerate and bake later!) and bake for 20 minutes, then remove the foil and bake for a further 10 minutes. Serve and enjoy!

Honey Smashed Potatoes with Toasted Almonds

INGREDIENTS:

2 tablespoons salt

1 package Simple Truth Organic™ Gold Gourmet Potatoes, 24 ounces

½ cup melted butter

3 tablespoons Simple Truth® Raw & Unfiltered Regional Great Lakes Honey 

⅓ cup Simple Truth® Sea Salt Roasted Almonds, chopped

DIRECTIONS:

Preheat the oven to 400ºF and line a baking sheet with aluminum foil. Grease lightly with cooking spray. Bring a large pot of water to a boil and add 2 tablespoons of salt. Boil potatoes until they can be pierced with a fork, about 10 to15 minutes. Drain and cool until able to handle. 

Place a boiled potato on a cutting board and smash it flat using a spatula. Repeat with remaining potatoes and place on the baking sheet. In a large bowl, whisk together melted butter and honey, then drizzle over smashed potatoes. Bake for 15 to 20 minutes, or until potatoes are golden and crispy. 

Arrange the potatoes on a platter and top with Simple Truth™ Sea Salt Roasted Almonds. Serve and enjoy!

Turkey Meatball & Veggie Sheet Pan Dinner

INGREDIENTS:

1 tablespoon Simple Truth Organic® Filtered Extra Virgin Olive Oil

1 pound Simple Truth™ Natural 93% Ground Turkey

1 teaspoon Simple Truth Organic™ Oregano Leaves

1 teaspoon Simple Truth Organic™ Ground Garlic Powder

2 teaspoons kosher salt

1 Simple Truth™ Natural Cage Free Grade AA Large Brown Eggs

½ cup Simple Truth Organic™ Whole Wheat Bread Crumbs 

1 8-ounce container Simple Truth Organic™ Sliced Baby Bella Mushrooms 

12 ounces Simple Truth Organic® Green Beans 

1 eggplant, diced

3 tablespoons Simple Truth Organic® Italian Dressing

DIRECTIONS:

Preheat the oven to 400ºF and line a baking sheet with aluminum foil. Grease lightly with 1 tablespoon olive oil. 

In a large bowl, combine Simple Truth Natural 93% Ground Turkey with dried oregano, garlic powder, kosher salt, and black pepper. Add the egg and Simple Truth Organic™ Whole Wheat Bread Crumbs. Stir until combined, then portion into golf ball–sized meatballs. 

In a clean bowl, toss Simple Truth Organic™ Sliced Baby Bella Mushrooms, Simple Truth Green Beans, and eggplant with 3 tablespoons Simple Truth Organic® Italian Dressing. Place on the baking sheet and spread into an even layer, then nestle in the meatballs. Bake for 20 to 25 minutes, until the meatballs are cooked through and the green beans and eggplant are tender. Serve with cooked rice and enjoy! 

This can be prepared ahead and reheated throughout the week.

Creamy Lentil Curry

INGREDIENTS:

2 tablespoons olive oil

½ large onion, chopped

3 garlic cloves, minced 

1½ tablespoons ginger, minced

1 tablespoon Simple Truth Organic™ Ground Curry Powder

1 teaspoon Simple Truth Organic™ Ground Turmeric 

3 cups Simple Truth Organic® Fat Free Vegetable Stock 

1½ cups Simple Truth Organic™ Coconut Milk

1 cup Simple Truth Organic® Dry Green Lentils 

Rice for serving

Salt and pepper to taste

DIRECTIONS:

Add oil to a large pot over medium heat and sauté onion for about 5 minutes. Then add garlic and ginger, and cook for another 3 minutes. Stir in curry and turmeric powder for a few seconds until fragrant.

Pour in Simple Truth Vegetable Stock, coconut milk, and lentils. Reduce to a low heat, cover your pot with a lid, and allow to simmer for about 25 minutes or until lentils are soft.

Serve over rice and add salt and pepper to taste!

Easy Sheet Pan Nachos

INGREDIENTS:

1 pound Simple Truth™ 90% Lean Natural Ground Bison

1 package Simple Truth Organic™ Mild Chorizo Spice Blend, 1.25 ounces

1 bag Simple Truth Organic Yellow Corn Tortilla Chips

¾ cup Simple Truth Organic® Garbanzo Beans, drained 

1¾ cups Simple Truth Organic® Mexican Style Blend Finely Shredded Cheese

1 Simple Truth Organic™ Hass Avocados, cubed 

½ cup Simple Truth Organic® Pineapple Habanero Salsa 

3 tablespoons Simple Truth Organic™ Cultured Grade A Sour Cream

¼ cup Simple Truth Organic™ Cilantro

DIRECTIONS:

In a skillet, add a splash of cooking oil and place over medium heat. Cook Simple Truth™ Ground Bison over medium heat for 7 to 9 minutes, stirring and breaking up the meat as it cooks. Season the bison with 1 packet of Simple Truth Organic™ Mild Chorizo Spice Blend, 1.25 oz. 

Preheat the oven to 400ºF and line a baking sheet with aluminum foil. Place a layer of tortilla chips on the baking sheet and top with half of the garbanzo beans, shredded cheese, and meat. Repeat the layering with the remaining ingredients, then place in the preheated oven for 10 to 15 minutes, or until the cheese is melted. 

Remove the nachos from the oven and top with cubed avocado and dollops of salsa and sour cream. Garnish with cilantro leaves and serve!
