INGREDIENTS

FRIED RAVIOLI

½ cup flour

2 eggs, beaten

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp dried basil

1 tsp dried parsley

1 tsp dried oregano

1 tsp salt

30 small cheese ravioli, cooked and drained

Vodka tomato sauce (or your favorite marinara)

CHEDDAR APRICOT ROLLS

1 8 ounce block sharp white cheddar cheese

1 cup apricot preserves

1 package egg roll wrappers

SPINACH GOAT CHEESE TRIANGLES

1 package frozen spinach, drained and excess water squeezed out

½ cup goat cheese

2 cloves garlic, finely minced

½ teaspoon salt

1 package frozen phyllo dough, defrosted

5 tablespoons melted butter

CAPRESE MEATBALL BITES

1 lb ground chicken

¾ teaspoon salt

½ teaspoon pepper

1 cup diced fresh mozzarella

½ cup roughly chopped basil

½ cup marinara sauce

PREPARATION

FRIED RAVIOLI

1. Place flour in a small bowl. Place beaten eggs in a second small bowl. In a third bowl, stir together panko, garlic powder, basil, parsley, oregano and salt.

2. Dip ravioli in flour, shaking off the excess. Dip in the beaten eggs. Finally, coat the ravioli in the seasoned panko. Place on a baking sheet and repeat with the rest of the ravioli.

3. Preheat AirFryer to 360º. Place ravioli in tray, being careful not to crowd them. Cook for 5-6 minutes.

4. Serve with vodka tomato sauce for dipping!

CHEDDAR APRICOT ROLLS

1. Cut cheese into large matchsticks, 3 inch long and ½ inch wide.

2. On a cutting board, position egg roll wrappers so they look like a diamond. At the bottom of the diamond, lay out a cheese matchstick and top with a line of apricot preserves.

3. Starting at the bottom, roll up the wrapper, covering the filling. At the halfway point, fold in the right and left sides, then continue rolling. Wet the top corner with a bit of water to seal.

4. Preheat AirFryer to 360º. Place egg rolls in tray, being careful not to crowd them. Cook for 10 minutes. Repeat with the rest of the egg rolls. Let cool for 5-10 minutes before serving.

SPINACH GOAT CHEESE TRIANGLES

1. In a bowl, mix together spinach, goat cheese, garlic and salt.

2. On a cutting board, lay out 1 sheet of phyllo dough. Brush entire surface with butter, then lay down another sheet of dough, and brush again with butter. Cut lengthwise into 3” strips. On the bottom right-hand corner of each strip, place a tablespoon of spinach mixture. Fold over to the left, so the mixture is covered, then fold up, and fold to the right. Continue folding in this pattern until you reach the end of the strip. Repeat with the rest of the spinach mixture.

3. Preheat AirFryer to 360º. Place spinach triangles in tray, being careful not to crowd them. Cook for 10 minutes. Repeat with the rest of the spinach triangles. Let cool for 5 minutes before serving.

CAPRESE MEATBALL BITES

1. In a bowl, mix together the chicken, salt and pepper. Scoop out 1 ½ tablespoons of chicken and flatten in palm to create a disk. In the middle, place a couple pieces of mozzarella and a sprinkle of basil. Fold chicken over the cheese to close the meatball. Repeat with the rest of the chicken.

2. Preheat AirFryer to 360º. Place meatballs on tray, being careful not to crowd the tray. Cook for 12 minutes. Remove from AirFryer and top each meatball with a small dollop of marinara sauce and a sprinkle of basil.
