    Paleo Superfood Strawberry Smoothie Bowl

    I’m not really a breakfast person but this bowl of strawberry goodness has more than converted me!

    Made with frozen bananas, coconut, strawberries, and the superfoods cocoa nibs, raspberries and blueberries, this heavenly paleo smoothie bowl is clean eating at its finest!

    So here’s the thing: I don’t eat breakfast! 😲 Shock! Horror!

    Yeah, I know breakfast is supposed to be the most important meal of the day and all that but, even the smell of food first thing in the morning literally makes me heave and I really don’t get those people who have to have a fry-up every morning with half a loaf of sliced bread.

    I prefer a glass of my hot lemon tea first thing in the morning. It’s the best body cleanser you can find and after drinking this for decades, I think it’s kind of made me immune to breakfast, to be honest.

    I couldn’t tell you the last time I had breakfast but I can only assume it was in Nigeria some twenty odd years ago and consisted of fried plantain and fried yam along with a tomato and onion filled omelette (which is kind of the Nigerian staple breakfast, actually).

    However, even though I don’t eat first thing in the morning, I do consider my first meal of the day to be a breakfast. It’s a fast break (as in breaking the fast you had whilst asleep) and thus, the first meal of the day – regardless of what time in the day it is – is technically a breakfast.

    So, be it 1/2 or 3pm, I always aim to have something healthy and clean for the ‘breaking of my fast’ and that’s where this delicious strawberry smoothie bowl comes in!

    Made with blended frozen bananas to create a creamy ice-cream consistency, then topped with superfoods, shredded coconut and fruit, this smoothie bowl is so delicious, it’s something I’d definitely consider waking up for!

    Blueberries, raspberries and pomegranates are considered a superfood due to their high levels of antioxidants and vitamins, whilst being virtually fat-free.

    Those chocolate tasting, little brown pearls of crunchy goodness known as cocoa nibs literally come straight off the cocoa tree and are the source of all chocolate.

    They contain even more antioxidants than blueberries (forty times more!), are super high in magnesium, iron, fibre, calcium and flavonoids (another form of antioxidant) and are known to increase one’s alertness and mood.

    So dig into this strawberry smoothie bowl, be smart, feel high and enjoy your superfood filled day!

    Ingredients

    2 frozen bananas

    50g frozen strawberries

    2 tsp. vanilla bean paste

    3 tbsp. honey

    Handful frozen raspberries

    Handful chopped bananas

    Handful blueberries

    Handful cocoa nibs

    Handful pomegranate seeds

    Handful shredded coconut

    Instructions

    Blend the frozen bananas, honey, strawberries and vanilla bean paste till smooth.

    Pour in a bowl and top with the rest of the ingredients.

    Serve immediately.
