Honey Ginger Simple Syrup
1 cup water
½ cup honey
3 large slices fresh ginger
1 piece grapefruit peel, about 2–3 inches
2 ounces Johnnie Walker Red Label
1 ounce fresh grapefruit juice, strained
¾ ounce honey ginger simple syrup
1½ teaspoons fresh lemon juice
Grapefruit slices (garnish)
Crystallized ginger (optional garnish) or candied grapefruit peel (optional garnish)
In a small sauce pan, heat the water, honey, ginger slices, and grapefruit peel over medium heat. This will take about 5–7 minutes to fully dissolve the honey and infuse the ginger flavor. Strain and cool.
Add ice to a shaker. Add Johnnie Walker Red Label, honey ginger simple syrup, and lemon juice. Shake.
Strain into a rocks glass over a large ice cube.
Garnish with crystallized ginger or candied grapefruit peel and a slice of grapefruit.
